    Maryland style, the seasoning ontop,
    gets on your fingers,
which transfers to the meat as you pick the crab.

The reason we steam is you get the fresh clean sweet crab taste.
The boiled crabs have the flavors of the ingredients in the pot.

For people saying ol bay is horrible have to understand that when Maryland people say ol bay its not necessarily the brand that is found in the stores. Most crabhouses or vendors have their own blend of seasoning called "ol bay" similar but different and better than the stuff you by in the can.

Hey Bro, Floridian here, and it's boiled all the way. I'm with you on how can the seasoning get into the crab shell by dropping seasoning on top of the crab. Nothing against the Maryland crowd cuz If I was in Maryland I would eat them just as well. My dad would put chicken wings or legs (or both) in the pot because he was allergic to crabs. That chicken in all that seasoning is so good. He also would put sausage eggs, and corn in the pot. For a guy who could not eat crabs, he sure could cook them. I cook mine the same way today. Great video my man as always.

Actually in Maryland when we steam crabs the seasoning seeps into the meat via steam. We steam in light beer and JO seasoning and is all you actually need for flavor. We don't have time to add all that unnecessary seasoning. And I've had the boiled style before...it changes the texture of the meat to what we call meally(soggy). But to each its own

Love the way you showed us how to do a proper boil as well as how to break a crab down. I made sure to save that video for future references. I'm embarrassed to say that I was born and raised in Louisiana, but never ate crabs or when to a crab orawfish boil until I was almost a young adult. I moved to Europe for 4 years soon afterward, so I definitely didn't get any Cajun food in Germany. I moved to AZ, then to OK, which is where I've remained for the last 30 years.
Let me be the first to tell you that these eople don't know the firstvthing about Creole or Cajun cooking, so I had to start from scratch. It's taken a few years as well as a few tweaks to perfect my dishes which are loved by most. I'm sure there's someone out there or a lotvofvsomeones in Louisiana that would bring me back down to size, but I honestly haven't met anyone who doesn't like my Cajun food. Honestly, I think it's because Cajun and Creole cooking is so flavorful. We love seasonings and to be able to taste it all. I'd love to go back to Louisiana and experienced all of the flavors I missed as a kid growing up there.
Keep up the good work. I'm looking forward to watching more of the videos you make.

Just use some of the boil liquid from the last cook to fill a plastic tub and freeze it, than next boil, use it to cool down your liquid with it.
Another tip is to use the the top crab shell like a ramekin to grill your oysters in. Gets all those flavors from the inside shell cookin with those oysters. Oh yeah.

Save the encrusted seasoning top shell, retain the mustard if desired, pick all leg segments. Occasionally dip a morsel into apple cider vinegar then touch the encrusted seasoning for a blend of flavors.
Had a crabhouse make Maryland crab soup on Monday from the weekend AYCE inventory. A cup had crabby treats when finding shell covered segments between the veggies. Soggy but tasty! Maryland steamed are my favorite. Enjoy

Who in Philly boils their crabs? I'm in PA near the MD line. We steam them MD style. I can't even fathom that somewhere in PA boils over steam. I'm being dead honest. Where is this place? I must see. I can't fathom that anyone from this area actually chooses boiled over steamed or that the place that offers it would even stay in business. What's it called. I'm seriously curious. For one, I gotta try. I've been to NOLA and had them boiled. They're ok. But I wanna try this famous Philly boil you speak of. Or do you just boil them at home? Where does Philly catch their blue crab? Can't be from Philly waters. Do they get shipped from MD? I'm so confused by this whole statement. Blue crab are in MD and Virginia waters. Maybe Delaware and even NC, but Philly or even Jersey blue crab? My mind is blown. I gotta see this 😂😂😂😂

I’m from Louisiana and grew up on boiled crabs. I tried them steamed and was surprised at how much the meat took in the seasoning.
One pro about steamed is it doesn’t take much liquid in the pot or time to create the steam needed to start cooking. Less liquid, less propane, less time.
One con is that you don’t get to boil all the flavor of the sides in with it.
If I’m doing the cooking I’ll go steamed but if someone else is, I’ll take boiled.
