Oh wow, I love vindaloo but have not eaten for a while. We used to make pork vindaloo but would be good to use beef or chicken too. I remember when it comes to vindaloo, it always taste better the next day. Yummm.

What can be used in place for pressure cooker? I don’t have the required size

If you get tender meat, you can cook in a deep casserole or a wok with little extra water. Keep checking regularly. If the stock gets evaporated add little water as and when required till your meat is cooked. Check for the consistency of the gravy as well. It should not be runny or too thick.
