    Best bacon ever. It was all I used to buy in the 70s as it was not only cheaper but had the best flavour.

    First time I've come across your channel 😊maybe a lucky stop.I'm 69yrs old, then wham!! I'm back home about 60yrs ago,my mum cooking up a Saturday fry up.I could see it,smell it. The family together eating, chatting For that memory alone thank you.Also you could get collar bacon joints to boil at home.Sometimes you would find a small bag of preserving mix in a crack.When cooked, cooled down ( next day better) thick sliced made into sandwiches 😮oh my worth the life shortening hardening of your arteries 😅Cheers 🥂 Allan&Family

    The Border Reivers used to carry bacon, a steel plate, and oatmeal. They'd fry the bacon dry as you did on the plate on an open fire, then add the oats to the rendered fat after the bacon was removed to make crude oat cakes. Sounds like a great idea to me.

    I half expected you to wipe the bacon fat from the pan with the top half of your roll before covering the sandwich. Now I‘be got to delve into my fridge to see what I can find to make for my tea. I know that I have some tomato sausage and eggs and I think there’s a piece of gammon in there too. I think that there’s some potato scones too!

    Your an artist in your craft. I get thick cut bacon from my local butcher,, not a fan of the super thin stuff either. The toughest thing to manage when cooking bacon is the blood that renders out, it coagulates and gets really sticky, novel in a non stick pan but cooking on iron is tricky.

    Where might one obtain such bacon? Presumably you could ask your butcher? What would you ask for and how would you dry cure it?

    Why can't you get collar bacon?? Because the supermarkets decide not to stock it of course. If you find a butcher who sells it buy it and get your mates and family to buy it

    The supermarket shyte as you call it, is absolutely drowning in liquid! and all that white gunk is gross but if all you have is a super market then its that or nothing I'm afraid. I try to get dryer bacon if I can. Next time I buy half a pig I might try making my own.
