SMOKED - BREAKFAST SAUSAGES - How to make sausage at home

  • welcome back everyone,,, in todays video I take BREAKFAST and put it into a sausage... you are probably thinking how but let me tell you,,, I've been thinking about this for a while and finally made it happen,, I take usually things one might have for breakfast and put them into a sausage (Bacon, Scrambled Eggs, Roasted Potatoes, sauteed onions, cheese) .... I am super happy with how this turned out... and here is the recipe I came up with for this beauty...
    meat block:
    Boneless pork butt - 2.47kg
    Belly trim - 1.24kg
    Milk - 400g
    Spices:
    Regular Salt - 2% of the weight of (meat and fat)
    Garlic - 2.6g per kg
    white pepper - 1.5g per kg
    black pepper fine - 2g per kg
    marjoram - 1g per kg
    mace - 0.5g per kg
    cayenne - 0.5g per kg
    potato starch - 10g per kg
    cheese - 580g
    bacon (fried) - 220g
    roasted potato - 370g
    scrambled eggs - 390g
    sauteed onions - 310g

      Thanks so much... this was a big gamble but totally paid off... and with the weather finally getting nicer here, I will be filming outside as much as I can.... I love it... 😀

      Thank you so much.. I really appreciate that... I'm definitely pushing the flavor boundaries and it paid off... I've got some more flavors coming this summer I've been working on..

      Go watch my breakfast sausage video I did a little while ago...in that I used real maple syrup and they turned out great....

    Great recipe and cook - since you didn’t add cure - what temp did you smoke at and how long did they take - I did a batch last weekend with no cure - smoked at around 200 and took approximately 75 minutes to bring to an internal temp of 151

      Hi.. thank you so much..... I cooked these to an internal of 71-73 Celsius (160-165) just to make sure they were fully cooked... I was running the smoker between 225-250 and these only took 1 hour and 15 mins to get there.... i could have run the smoker a little cooler to have them in there longer to get them darker but I've done it this way the last few times and I'm very happy with the colour and taste.... I appreciate the support... thank you...
