While Im not too familiar with Quail, for the best quality I'd rest it for at least 24 hours, prevents it from having "Green" meat, which means it's going through rigor mortis, causing the meat to be tough and could impact the flavor as well. Thank you for making these videos, I learn something new with almost every post, and knowledge is beyond valuable to me.

Use good shears or plant scissor to just cut off the head. A lot faster and safer than a knife.
