- OLD SCHOOL CHERRY CHEESECAKE
This is one of the most popular desserts for Christmas
Its very easy and creamy and delicious
RECIPE:
1 1/2 cups finely crumbled graham crackers
6 tablespoons melted butter
1/4 cup sugar
1 pound cream cheese
1 tablespoon Vanilla bean paste( OPTIONAL)
1 1/4 cups Sugar
1 teaspoon Vanilla Extract
3 Large Eggs
1 cup Sour Cream
1/8 teaspoon Salt
Prepare graham cracker crust - mix together with a fork until all ingredients are moistened. Spread the mixture evenly in 10 inch pan. Using your fingertips or the flat bottom of a drinking glass, firmly press the mixture over the bottom and 1/2 inch up the sides of a pan. Freeze for 20 minutes. For a crunchier crust bake in a preheated 350 degree oven until lightly browned, 10-15 minutes instead of freezing it.
Preheat oven to 300 degrees. In a medium bowl, beat cream cheese until creamy, about 30 seconds. Do not over beat. Gradually beat in 1 cup sugar and vanilla extract. Beat in 1 egg at a time, just until incorporated, scraping the sides of the bowl and the beater after each addition. Scrape the batter into the crust and smooth the top. Place on a cookie sheet. Bake until the center just barely jiggles when the pan is tapped, 45-55 minutes.
Remove from oven and continue to cool in the pan on a rack for at least 1 hour.
Let cool completely in the pan. Cover and refrigerate for at least 3 hours preferable 24 hours, before serving.
Remove from fridge and top with cherry pie filling topping

Hi Chef Jeff!!!! I will definitely make this cheesecake. I made one for Thanksgiving and it was too dense for me. I used 3 blocks of cream cheese. I see some people will add any where from 1/4 to 1 C of whipping cream (based on how much cream cheese they're using I guess). If I can get it to be somewhat light & creamy I'd be alright. Thanks for sharing!!!!

Chef, I have a question on sweet potato pie..When you use the pre made crust, should you brown it before pouring in the filling..My grandmother used to do that and pinch the edges with a fork..I've seen pies that have a white gummy crust after baking..Sorry to be off the cheese cake topic.. 😃🤔

Good Morning Chef Jeff!!!! I love me some cheese cake. My father was in the Army and when I was 8 my father was stationed in Germany. I remember getting my first taste of cheese cake was amazing. I was hooked. I know when got back to the states and I got my first piece of cheese cake. It did not taste like what I had in Germany.
