I was reminded of the first time I visited one of these bakeries in Tokyo, and my local friend's father giving me a long history of how the Japanese 'invented' this kind of baking by learning from the French - and then everyone else in Asia started copying them.👍🏻😀

it's thicker and less sweeter. has creamier consistency. it's nothing like whipped cream.
It's hard to imagine where the profit margin lies with something this labor intensive and time consuming..they're truly beautiful works of art.
