    WHAT IS KOBE BEEF?
    Kobe beef is one of Japan’s three famous brands of wagyu beef. It comes from Tajima cattle that are raised in Hyogo prefecture and meet strict criteria in terms of environment, breeding, and meat quality. Only virgin Tajima cows can qualify as “Kobe beef,” and they must meet certain standards, like a BMS of 6 or higher and a yield score of A or B.
    HOW IS WAGYU RANKED?
    There are 2 different ranking systems for wagyu beef, according to the JMGA (Japanese Meat Grading Association) and BMS (Beef Marbling Standard). JMGA gives the yield quality (represented by a letter from A-C) and a number from 1-5 that represents the quality of meat (marbling, color, etc.). Meanwhile, the BMS system ranks wagyu from 1-12 based on the marbling density.

      I just can't see spending that much money for a piece of meat. I think Japanese has a problem.....2 Mangos for over $ 5000.00 U.S.D. 2 Japanese pear for $ 7000.00 USD. 2 PIECES tuna sushi for $ 10000.00 U.S.D. Get real!

    • @Robert-em5ib
      @Robert-em5ib 2 года назад +4

      @@davidli5115 ~$110 per pound for Kobe Beef isn't that bad. Everyone has their preferences...
      Examples:
      you can get a single teaspoon of Strottarga Bianco caviar for as high as $37,000.
      Fresh white winter truffles costing from $6,000 to $10,000 per pound.
      Saffron costing up to $5,000 at wholesale prices and up to $10,000 at retail prices per pound.
      You can pay as much as $4,500 for a whole leg of jamón ibérico ham.
      Madagascar vanilla costing up to $600 per pound.
      You can literally buy a 24k gold crusted pizza in New York for $2500 and a burger for $5000 in Vegas.... By your standards that would mean every country has a "problem". Don't be prejudiced.
      and let's not get started on expensive things other than food....

    I was in Kobe with my wife only two weeks ago eating a very similar meal. One thing I noticed…. The Kobe beef was even more flavoursome when it cools down, the fat and flavours become more pronounced. My wife loved the cooked fat that they dice up and serve on rice. That tofu appetiser looked 🔥

    only had it once and that was in 1986 when i went to Japan. we were in tokyo and a freind we were with had a sister living there. she took us to teppanyaki place . She said that that place was so exclusive that one could not just walk in or make a reservation. had to know the owner to get a seat. Were were served huge tiger prawns and Kobe beef. To this day 35 years later i still remember how the beef melted in my mouth. that meal cost use $250 a head . $250 for a meal was quite a bit of money back then .
    Never been back to Japan since. might go after the pandemic is over

    Other than Sushi/Sashimi there's nothing more emblematic of Japan's "distilled" approach to food. A perfect piece of artfully raised beef, cooked very simply. I am curious though...
    1. You were served a selection of salt on the side. Was the beef seasoned with salt during cooking too? I saw what I presume to be black pepper used, but not salt.
    2. Is Wagyu beef aged? Dry or wet aged? For how long?
    I am enjoying very much your content. Superb production values.😀

    • @glennedwards1449
      @glennedwards1449 Год назад

      Since no one has answered you I will take a run at it though just guessing really.
      1/ no seasoning applied the chef appeared to use butter but it was probably unsalted. In other restaurant's the fat used to cook would actually be Kobe beef fat.
      2/ No Kobe beef is not aged that process is to increase the flavours and textures of mostly inferior beef though not always however there is no need with Kobe.
      Fun fact decades ago in Bangkok there was a restaurant that got caught selling fake Kobe beef yes it is so expensive it was worthwhile to counterfeit it. To be fair this was before ageing was a thing and before Australia got into the Wagyu market.

    @Japan by Food
    I believe this is not the 1st time Shizzy had this type meal in this particular restaurant, right? 😏
    Anyway, as this is one of the ultimate meals in the world, just for today, I will not bore everyone here with my sharing. However, for those who wish to enjoy this ultimate God-tier experience to the fullest, I would give one advice which is to bring your own set of metal or plastic chopsticks.
    Believe it or not, the material of the chopsticks you use for your ultimate meal actually affects the taste of the food you eat and your overall experience(this is scientifically proven with independently backed scholarly-researched papers and it is also peer-reviewed).
    I understand that due to the current COVID-19 global pandemic situation, restaurants would prefer disposable wooden chopsticks but trust me, using your own set of clean metal or plastic chopsticks would enhance your overall dining experience to the max! It is more environmental-friendly as well!
    Stay safe always everyone.
