Around 5lbs of skin off pork belly (usually half of one but you can find pork belly strips)

What pellets did you use, hickory?

@@ShawnBauer no worries. Do you recommend apple pellets or do any other work as well? Planning on following your recipe in the coming weeks.
Any will still give great results, if unsure they sell blended bags in most places that sell pellets. These are good for anything but, this is just my opinion
