    Ingredients make 15
    4 cups self raising flour (500g)
    ½ cup butter (100g)
    1⅓ cup milk (350ml)
    1 tbsp finely chopped chives (15g)
    ½ cup shredded red Leicester cheese (50g)
    ½ cup shredded Cheddar cheese (50g)
    ½ cup shredded Parmesan (50g)
    1 tbsp caraway seeds (10g)
    ⅛ tsp cayenne pepper
    Method
    Preparing the Dough
    1.Combine Dry Ingredients: In a large bowl, mix together flour, caraway seeds, baking powder, and a pinch of cayenne pepper.
    2.Rub in Butter: Using your fingertips, rub the cold butter into the flour mixture until it resembles coarse breadcrumbs.
    3.Add Cheese and Chives: Stir in grated cheese and chopped chives.
    4.Form Dough: Gradually add milk, mixing with your hands until the dough just comes together. Avoid overmixing.
    Shaping and Baking
    1.Shape Dough: Lightly flour a clean surface. Gently shape the dough into a ball and roll it out to a thickness of about 2.5 cm (1 inch).
    2.Cut Scones: Use a 5 cm (2 inch) cutter to cut out scones. Place them close together on a baking sheet lined with parchment paper.
    3.Bake: Preheat oven to 220°C (425°F). Bake scones for 12-15 minutes, or until golden brown and risen.
