I love eggplant and potatoes and onions, cauliflower, pretty much every vegetable except for rutabagas. What a delicious recipe. The dish doesn't end up oily at all.
Glad you observed that the end product was not oily. Just cannot make some people understand that if I really used too much oil then the oil would have floated on top at the end of cooking. Hard to explain everything in one video . Thanks for leaving a comment.

I am probably missing something, but am wondering if there are any written instructions in your recipes to show how big or small to cut things up and whether or not i should peel certain vegetables or not. I love baingan bharta too. In Bengal, we roast the eggplant over open flame, then peel it, add mustard oil, green chillies, fresh ripe tomatoes and generous amount of dhaniapatta and salt , mix and serve. Nice recipe Bumbi there is a Gujarati version wherein both the potatoes and and aubergine are fried in oil separately and brought into the pan towards the end. They also add sesame seeds, toasted gram flour(besan),crushed peanuts, desiccated coconut and garlic chives into the dish and and it is usually served as a dry dish like aloo gobi.

I am making this for supper tonight because I have some Indian baby aubergines which looked so fab I couldn’t leave them in the supermarket. I have an unrelated question though… do you think a curry flavoured risotto would work? Im thinking finely chopped onion fried in oil. Add grated garlic and ginger, some spices. Add chopped mushrooms. Fry for a few minutes and then add the rice to the oil as you would with a risotto. Next add some vegetable stock, till the rice absorbs the liquid, continue till al-dente. Maybe add a few peas? Finish with chopped coriander. Sort of a creamy biryani… do you think that would work? Any suggestions what spices would work best?
Some Brinjals do harden up after adding tomatoes. Fry the tomatoes very well first, add the brinjals after the tomato forms into a dry mush. You can also fry the brinjals a little in the beginning and then add later
@@CurriesWithBumbithanka for replying.i actually did do that..made an onion tomato gravy before adding the brangels..but they wouldn't get soft, I will try frying them 1st...than add them.. hopefully it makes a difference

You can also add paprika for the colour

Spice Paste:-
1 tsp Tumeric (Haldi) powder
1 tsp heaped Kashmiri Chilli powder (or 1/2 tsp regular Chilli powder or 1 tsp Paprika)
1 tsp heaped Cumin (Jeera) powder
2 tsp freshly grated Ginger
4 tbsp water.
Combine and set aside.

Excellent idea👍🏽👍🏽. I would add little cumin seeds, a small cinnamon, a dry bay leaf to the oil. Curry powder/ sabji masala will go well
Why do you fry the potatoes? Can you not add parboiled potatoes?
Parboiled potatoes won’t be as tasty as fried ones

@zahidagani21 yes fry them till they are 50 - 60 percent done. Sometimes it depends on the variety of brinjals as well.
