You're 100% right! Bringing the bow to the eye increases accuracy, comfort and also speed in aquiring your target. You're already looking at the target. If you bring the bow to the eye you're already looking at the target VS looking around with the bow after you bring your head to the bow and possibly missing the opportunity to get a shot at the animal
I have a problem with both my crossbow and my two rifles. Even if I bring the crossbow/rifle up to my eye, I have to tilt my head to about a 40° angle to look through the scope. Does this affect accuracy?

It can. Your generally not comfortable in that position you may want to try taller scope rings
