    Corn bread is the bacon of the bread world, it makes everything better! One secret to a lot of American food is, how can I take a few cheap items, mix them and spice them into a good family meal! Hope you are both having a great Monday! Peace.

    A big hunk of cornbread, covered with in beans and the juice, cooked with a ham hock. Just about as good as any steak. We had red beans and rice night before last... yummie.

    Cornbread crumbled in a glass with milk poured over it is a true Southern snack at bedtime. I grew up on that as comfort food.

    Zatarain’s is always a good meal. I keep plenty of varieties on hand and Dirty Rice is probably my favorite. ❤️

    You may experience a difference in flavor if you put the onions in first ,when they turn translucent ,add the garlic, then the meat. This way the meat picks up the onion and garlic flavor, the brown bits that stick to the bottom of the pot are concentrated flavor.

    You guys are probably the only ones outside America who know about Zatarains. So you all are special and someone must really like you out there. This is the only company I know can do Cajun foods very well in a box.
    11:45 Boil is what you want. The other is Broil, which in America means to have it in the oven with the top burner on, typically to sear the top of meat. Usually using a broiling pan to catch the juices from the meat.

    Hey, you're doing your best with the ingredients you got. Any smoke cured beef/pork/deer sausage that is spiced well works good in a cajun food recipe. Andouille is just basically chunks of ham, seasoned with Tony's, and cured with smoke. Any pork or pork and beef sausage that is smoked will work.
    I can't say I have tried anything other than Jiffy cornbread or cornbread made from scratch which is kind of buttery and salty, I'm a Jiffy guy myself. It's good with anything, or by itself, with dinner or as breakfast with butter and syrup.
    My mom and grandma used to make us "couche couche" for breakfast, leftover cornbread with some evaporated milk and sugar or sweetened condensed milk and coffee mixed in to make a porridge. You can imagine the cornbread 'sticks to your ribs" to keep you full for a while, a few spoons of sugar and the dark roasted community coffee is a real kick in the ass before school lol.

    I live in Baton Rouge LA. Red Beans & Rice has always been the traditional Monday supper. Long ago Monday was wash-day which was very time consuming and labor intensive. The clothes were washed by hand after being boiled in hot water. There was no time to cook supper so early in the morning. the lady of the house made her Red Beans & Rice and kept them on the back of her wood stove to simmer all day. Still a tradition for us today - only many people still make them from scratch and they are way better than the boxed kind.

    💙🇺🇲 Ditto, what @Kanomorrow7622 said. I know it would add so much to your show if you could convince maybe a couple of close friends or a family member or two to taste test with you. They wouldn't have to be there with you during the cooking part necessarily as it would become too crowded but now that i think of it maybe this is a question that is better left for when your all settled in your new place and you Recky and Carol have time to think about how you would feel about expanding into having quests on your show. Never know, you guys may hate the idea and that's ok because it won't stop us from watching! 😊

    Yes, we use andouille (it's French, linguistically, so it's pronounced an-DOOOO-wee) or smoked sausage or polska kielbasa.
    Bring to a boil where the liquid bubbles. Broiling (with an r) is for solid foods in the oven, cooked at very high temperature (about 550°F) close to the heat source. In America, our electric stoves have 2 heating elements... One on top for broiling and one at the bottom for baking. Gas ovens have a separate drawer for broiling underneath the one heating element.

    My favorite meal is black eye peas a slice of sweet onion with tomatoes with hot buttered sweet cornbread. A meal fit for a king.👍

    The really good thing about that box rice is that you can throw ANYTHING in there with it! Leftovers, fresh cooked meat & vegetables, use your imagination. You can do a lot with that to extend your meal, cook cheap but healthy and have some extra for later! It’s simple stuff, rice & beans and cornbread. It doesn’t get any easier to make and enjoy for practically nothing. Bachelor food for sure! Ha Ha!

    Red Beans and Rice with smoked sausage in it is one of my favorite meals. The cornbread I usually make from scratch but the packets aren't bad and a lot easier. Especially for someone who may not have the ingredients or experience.

    Louisiana here, home of Zatarain's. Just finished watching and I’m having a Twilight Zone moment. For lunch I had red beans with ham and Martha White cornbread. And it’s the right day to eat red beans. I don’t know if y’all realized it, but Monday is the traditional red beans and rice day in Louisiana. I’m not a Jiffy fan (too sweet). The Martha White yellow cornbread mixes, the ones with very little added sugar, are my favorites. I prefer my red beans over a slice of cornbread rather than with rice. I'm a rebel. 😊

    Recky's black apron was so slimming! :) I've had a 'meat chopper' for many years and it's amazing that such a simple design makes such a difference when cooking ground meat. I'm no longer able to eat very spicy foods but love dishes which lean 'comfort.' Everything you've made, recently, would be ones I'd like. 😊

    I usually make my cornbread in a cast iron skillet or cornbread ( shaped with little corncobs ) baker. I love both red beans or black beans and rice! You can also go full Tex-Mex and use refried beans and tortillas ( rolled up ) !

Here’s something completely crazy…I think I know one of your Aunties!!! We had a family member with disabilities and her teachers name was Miss Kay.     In Louisiana red beans and rice is traditionally served on Mondays. Women back in the day would put their beans on to cook all day slowly while they did their laundry. At noon or at 5:00 they would serve with rice and maybe some greens. It was easy to cook and they could let it cool slowly while they worked all day. Glad you like it. 22:54 👍🏻🧓🏻🇺🇸Texas 23:04

    Carol, over here anyway, broiling takes place in the oven, with the heat coming from above. Boiling, however, takes place on one of the burners of the stove. However, when you put the biscuits in , they'll be baking, since the heat comes up from below in the oven in this case. Free information!😀 My feeling is that, if and when you make it over here, you'll need to stop in Louisiana, and try these foods in a restaurant.

    Red beans need a southern hot sauce such as Franks, Trappeys, Crystals, Texas Petes to put some zing in them.
    I like putting chiles and corn in my cornbread and then shaking hot sauce on them.

    A Smokey or garlicky kielbasa is a nice substitute for andouille if it isn’t available to you or cost prohibitive
    People have sent you good brands of cornbread mix.
    The directions tell you to use water but if you have it milk or buttermilk or sour milk will make the batter richer & moister

    Zatarains is my favorite brand for a quick dish. Yes, to doing the cheesy jambalaya. It is mine and my son's favorite Zatarains and there is definitely a different taste from the regular jambalaya. Moa is too cute in her chef hat.

    Cornbread is the best! I like it with lots of butter, too, and honey or jam or maple syrup. It's also good with chili peppers and cheddar and bacon mixed into the batter. 😋

    I think y'all need to make it from scratch! I'm from Mississippi and I make this a lot. When I make the boxed one I dump out the meat in a bowl and store it in the microwave to keep warm place. Cook the red beans and rice as directed on box and about 5 or 10 minutes before the rice is done I add the meat back in and simmer for rest of the time. Also, if there is about 2 tablespoons of fat or oil after cooking the meat/ sausage then I don't generally don't dump it out if it uas browning to it. You can add a small pat of butter or oil....but I generally don't but you want to it for use it for flavoring. The Martha White's is spot on! This is what I do. If you ever want the way do it PLEASE DON'T HESITATE!!!

    We always us cotton country corn bread but we add egg and 2/3 cup milk

    Zantarans is one of the better brands of boxed rice. Don't worry about it not being homemade because using boxed stuff is how a lot of us cook. Southerners would not consider Jiffy "real" corn bread. we call it cake. My grandmother made conrnbread from scratch it wasn't sweet like Jiffy which to me made it better for mixing with stuff savory stuff like chili or red beans and rice or anything really. Some people refer sweet cornbread, so to each his own.

    I grew up on cornbread that was not sweet, so I prefer it that way. When I buy cornbread mix, I check the sugar content & buy the one with the least sugar. Take a muffin & crumble the whole thing into the dish & then eat.

    I love all kinds of Cajun food but my absolute favorite is Red Beans and Rice. To add the sausage is typical. Adding the hamburger meat is actually a new concept to me. I'm sure it was good but too much meat for me. Something you might find crazy is that some recipes will use Red Eye Gravy in it which has coffee added to it.
