Memo to everyone getting down on Bacardi: Relax. Simple solution... use your rum of choice. How about that?! I personally like Bacardi in a daiquiri, although I use 10Cane if I have a bottle of it around. For anyone wanting to actually 'overthink' this cocktail, checkout Jim Meehan's vid. But with tropical type drinks, I tend to go with the free spirit approach of Steve. Nice vid!

Foolproof recipe
2 oz Bacardi Carta Blanca.
1 oz freshly squeezed lime juice.
2 bar spoons caster sugar or 3/4 oz simple syrup.

I'm just not good enough to make it taste right without actually using a jigger, and one with the ¼ oz increment lines in it to boot. I'm so impressed by bartenders who can be accurate to the quarter of an ounce without a measuring device and never get the balance of flavors wrong. It's almost unbelievable.

Just being a smart ass here. But seriously, I'm echoing the sentiments of Sam Ross regarding bartenders who don't use jiggers etc. Like, I'm a home bar nobody. But I've literally never gotten the balance even a little off on a drink (that was already a proven recipe, not talking about experimenting here) when I used a jigger. Like, if you always measure it it will literally ALWAYS be correct.
Always measure your ingredients for consistency..

That's just about any cocktail but it really it's just a formula for punch. Remember the above and you'll make great drinks.

Try using Papa's Pilar Blonde Rum in this recipe with turbinado sugar instead of caster and add a float of Papa's Pilar Dark Rum. You won't regret it.

This chap is amazingly fun to watch and to listen to, but I disagree with his choice of bartending, be it technique or choice of ingredients (Bacardi is not terribly good)

patriotbarrow No that is true but the returns are diminished particularly in the case of mixed drinks. In the case of most mixed drinks the goal of the alcohol is to go as unnoticed as possible.
Its like a chef, if you have fresh seafood, you just use it with little prep. If not, you need to add more or prep more to either compliment existing taste or cover unwanted taste.

everyone is complaining that he didn´t measure the ingredients or that Bacardi is shit but guys please! First of if you are a good bartender and pay attention to your pour the mesurement of the ingredients will be good it is designed to pour at a consistent rate. Also Bacardi is not complete shit and just becouse you make a Daiquiri with Bacardi doesnt mean it will taste bad! (granted a better light Rum would make it better, but the general customer would most likely not even notice) What matters is if the lime is good and it was freshly squeezed so it´s most likely good. What should bother you and what makes it clear that you don´t know what your talking about is that he didn´t double strain it.If you don´t double strain it you will have ice crystals in your drink which you don´t want unless you have cubed or crushed ice in the drink.

The Daiquiri, the Mojito, and the Cuba Libre are three iconic rum drinks that were invented in Cuba with Bacardi as Bacardi is the world's first rum company.
Edit: You can use any white rum you want but historically these drinks are bacardi drinks.

I guess it sucks to be (both of) you! I love "better" rums too but I still like Bacardi in the appropriate drink. Saying "I think Bacardi is awful" is mature and respectable. Saying "It's awful" kinda sounds like you are trying to be something or somebody based on what kind of spirits are beneath your level of taste. Which of course is silly, as taste is subjective so there really isn't an up or down, less or more, better or worse - that stuff is bologna (no offense to bologna). You like what you like, you hate what you hate. But dissing in an absolute sense on a matter of taste is so... useless.
