Enjoy the authentic taste of South Indian cuisine Recipe 1. Wash and fan dry the star gooseberries. I have taken about 1 bowl of gooseberries. (It is seasonal and is available throughout the month of August and September, if you see this on your way, grab a few to make these tasty pickles) 2. Heat pan and toss in mustered seeds 2 tbspoon and 1 tbspoon fenugreek seeds until it starts fluttering 3. Grind this to a coarse powder 4. Add 1 full cup of mustered seed oil 5. After the oil is medium hot, add a spoon of mustered seeds and hing(asafetida) 6. Add the gooseberries , 8-10 garlic cloves and mix it well so any leftover moisture is removed 7. To this add the grinded coarse powder 8. Add 2 table spoons of chilly powder or more as per the spice level you like 9. Add Rock Salt , it tastes better (Study says Rock salt has less micro plastics, so it is a better option compared to powdered salt) 10. Mix all together and transfer it to a pickle jar. Store it for one day undisturbed 11. Day 2: Mix it well with a dry spoon and keep it back in place until Day 3 or 4 12. On Day 3 , if you see oil floating on top of the pickle then, it is ready to be served and enjoyed with hot rice and ghee (my favorite combination) or with curd rice (my brother loves this combination, whatever!!). Enjoy the recipe. Hope you like it Will be posting more pickle recipes from my recipe journal. Stay Tuned!!!!
