Contemporary Cuisine: 48 Hours Sous Vide Galbi, Veal & Galbi Reduction | Modern Korean Food

  • Today, it's part 2 of my galbi jjim video! I made galbi in a contemporary cuisine style. In this modern Korean cuisine, I changed up some of the cooking techniques like cooking the galbi (beef short ribs) sous vide 48 hours instead of traditional braising and couple others in the video (butter poaching, veal reduction sauces, etc) while trying best to keep the traditional components of galbi jjim (kabocha, onions, ssamjang, perilla leaves, etc).
    I know modern Korean food is very controversial. By no means I am trying to say that this is an improvement from the traditional method because it clearly is not, nor am I saying people would prefer this over the traditional. Many would prefer the traditionally braised, melt in your mouth galbi jjim over this style of food and there is no doubt about it. I just enjoy experimenting with different methods and techniques that I've learned throughout my career, on the type of cuisines I grew up eating.
    That being said, I am happy with how this turned out to be. The texture and the flavor of the short ribs were delicious with a subtle smoky flavor from the barbeque grill. Veal reduction infused with galbi braising liquid was also tasty and different!

      ㅎㅎ 고맙습니다! 갈비는 상당히 괜찮아요! 전혀 퍽퍽하지않고 좀 색다른 식감이라고해야할까요? 부드러운 스테이크 아니면 찜과 스테이크에 중간정도에요 ㅎㅎ
