Japanese tools are absolutely gorgeous. I actually enjoy the demand they have on me to maintain them. I have some white paper kitchen knives and within 60 seconds they will rust if water is left on them but they cut like a laser beam.
I really hope the dowel making process will be explained in the dining table video. Can't wait to see it either way!

now every piece of wood in your shop has a chamfer in it
Ive seen one where the blade is straight. The one you have is angled. Any idea on the difference?
It's not a big difference either way. The only benefit of the angled blade is when you chamfer across the grain. It prevents tear out, or breaking the corners off when planing.
