I make the same kind of pide except for the fact that my recipe is half water half milk... and I keep them more in the oven for a beautiful golden colour and cruncy texture. As for the filling, you can put anything you fancy. I use to make them with minced lamb meat or a mix of mozzarella and riccota, or thin slices of potatoes and onion rings, or spinach and mozzarella, or diced tomatoes and bell papers.... another tip: before putting pizzas in the oven, spread a mixture of yogurt and water over the borders and then sprinkle some chia and/or sesame seeds..., yummyyyy !! Oh yes.. living in London makes me miss out on delicacies like this one! in Cyprus, in the northern part of the capital, we have a Bakery that serves something similar (whisked up eggs containing grated halloumi and pieces of local pastrami). Honestly nothing beats fresh peinirli, from home or peinirli specialised shops (either anatolian or Greek style they are both quite rare to find) all bakery bought peinirlis are essentially just bread with cheese unfortunately, even fresh. More ment to be filling than interesting.

After the butter in the end I would broil for a minute to get a nice dark golden color on the crust. That will make it look a lit more appealing that it does right now. Also, I'd love to add some tomato sauce, basil and belle peppers in the stuffing to get that real pizza feel. :)
Thodoris K - I know that dude. But peinirli also usually has a much deeper golden brown crust. That comes automatically in the hot wood fire ovens but when you're doing it at home, just like with pizzas, a minute under the broiler will get you close to that perfect crust.
