- A new Indian restaurant has landed in the heart of "Proper" London & it's the talk of the town........if you still think that Indian restaurants are just about Chicken Tikka Masala, Rogan Josh & Vindaloo; then it means you still haven't been to this new and exciting modern Indian restaurant - having drawn inspiration from many months of travelling around India; they have created a deliciously ecclectic menu which showcases some of India's lesser known cooking styles - catering to both non-veg & veg palates.
We feel very privilaged; because in this video Master Chef Sameer Taneja (a former chef at Atul Kotchers Michelin-starred Benares restaurant in Mayfair) reveals some of his recipe secrets for making his version of a Masala Papads "Katchumber" (a tomato & onion salsa), we are also shown how he makes Kale Chaat & Talli Joe's very special Truffle Ghee Kulcha (it is very soft, pillow like and very moreish).
Well worth mentioning their "Roti Sabzi" which is a deliciously sublime & moreish Jack Fruit Curry served in a freshly made pitta bread pocket (it may just fool even the most seasoned meat eaters into thinking they are eating pulled chicken or pork) it is absolutely delicious!!!

Recipe for the roasted Masala Papad Katchumber is:
Cumin popadoms cut into halves & then roasted & the rolled into cones.
Red onion.
Deseeded tomatoes.
Salt.
Salt & roasted cumin powder.
Finely chopped green chilli.
Sqeeze of lime.
(Optional - you may wish to add chaat masala).
The Kale Chaat is a take on Palak Patta Chaat (which uses Kale instead of Spinach).
Using a pakora type batter using carbonated water to create a very crispy tempura batter.
Fried cubes of potatoes.
Herb Chutney (made using curry leaf, mint, basil, dill, tarragon & green chilli).
Black chaat masala.
Pomegranate seeds.
Vermichelli (sev)
Sweet (syphoned) yoghurt (syphoning the yoghurt creates a very light mouse like texture).
Tamarind & dry ginger chutney.
Freshly chopped green coriander (dhania).
Truffle Ghee Kulcha:
Ghee infused with truffles at 60 degrees over two days.
Kulcha filled with cottage cheese.
Kulcha dough (flour, egg, yoghurt, water, salt, sugar) hand stretched & then cooked in a tandoor oven.

I make and sell chaat and curry but all my recipes are 100% plant-based so suitable for vegetarians and vegans. I started selling chaat in 2016 at vegan fairs and food festivals. I've been cooking curry, dal etc since 2003. I sold my business in 2016 (windows, not food) to concentrate on creating a vegan food business. Initially, I made cultured vegan cheese but it wasn't enough and the spices were calling. 2017 Was a tough year trading but I got through it. When you have a passion you go without materialism and although I'm struggling I still totally believe that one day I'll shine. This year I'm having an online shop built, next month it will go live with a selection of pure veg curries, mock meat curries, dal and kebabs. And I'm still attending events on the weekends, this Saturday I'm at the Hanslope Vegan Fair near Milton Keynes and on Sunday I'm at the Oxford Vegan Fair in the town hall.
I live near Norwich in Norfolk, there are not many pure veg Indian restaurants around these parts but I'm friends with the family who own Namaste Restaurant and have a great deal of respect for what they do up here. And Cafe Malabar is nice, its run by a family from Kerala, their food is spot on. But you have all that choice in London, I think I'd be eating out every day if I could afford it! Anyway, thank you again for all your videos, it's lovely to see someone with the same passion as I have for vegetarian Indian cuisine and please keep them coming, it's so educational for a self-taught cook like myself.

Just had a look at your Instagram page: I really like the sound (& look) of what you are doing: ie Vegan Fusion / Indian food.
It's a shame that you are not based in London as there is a bigger consumer demand (from what I've seen) here in the capital; there some big vegan events that take place such as "Vegan Life Live (Feb 2018)", "Just V Show (summer 2018)", "VegFest" etc...... if you've haven't done so already; then it's sometimes worth visiting (without trading) just to get further inspiration.
Please do let me know if you have any events planned for London; would really like to taste some items from your menu.
I do like the sound of Namaste restaurant (just had a look at their menu).
Persevere and you will succeed and shine.......think success and you will attain success!!! Hopefully the videos you are watching will help you learn and you will gain the further knowledge you require to get the business formula perfect.

Prices seem very reasonable for the quality and intricacy of what they are doing - and the location. He added a lot of truffle and that’s not cheap, that’s just £3.75? I’ve seen lower end places on your channel charging more for simpler, basic items.
Sadly this restaurant has since closed down.
Great video with super great description.....plz start putting elaborate description like this in previous videos too....if you can’t then just mention put name of the ingredients.....some ingredients we cannot hear sometimes....but this video has everything.....whatever we can’t get through video description completes everything.....god bless you bro....for sure deserve million views.....For this and your other videos too....

Not even close to be called authentic when it comes to Masala Papad.
Masala Papad ingredient includes - Khichia Papad(It's a different which is thick & large one), Onion-Tomato-Cucumber-Green Chilly-Parsley-(Spring Onion is optional), Salt, Pepper, Red Chilly Powder, Cumin Powder, Green Chutney, Tamarind-Dates Chutney, Red Chilly - Garlic Chutney, Yogurt(optional), Sev on top.
