He's a legend here in Phoenix. His pizza is amazing!
I make pizza from scratch every other week. It is very easy to make and it tastes delicious.
Dough:
- 2 1/2 cups of flour
- 1 cup of water (I start with the water warm, add one spoonful of dry yeast and a bit of sugar, and mix; wait a few minutes until it foams so that you know yeast activated)
Add flour in mixer bowl with some salt. Put the water and a splash of olive oil (one spoonful). Mix. Let it proof until it doubles or triples in size. If it a warm day it can be like 30 minutes.
Then I stretch the dough on a pan. First, I put it 3 minutes in hot oven. Then I take it out and put tomate sauce (I get a can of whole tomatoes, put mini mixer in the can to make it a sauce). Spread tomatoes, put oregano, back in the over until the base is done. Then mozzarella, back in, one for a few minutes or mozzarella gets watery. Out. Add basil. Eat.
Done.

Now come to Phoenix and literally wait 3 hours in line for the place to open at 11, along with local and national celebrities. They are yearly put on the list of the top hundred pizza/Italian restaurants in the country. And sometimes have topped that list. And he is credited with revolutionizing today's new pizza trend. If you don't know, Kimmel literally had Chris build the same pizza oven from Biancos in Phoenix at Jimmy's house in CA. Jimmy is a Master chef himself, other than pizza. Guaranteed he'll cash in with a cookbook of his own one day.
IF THE 4 STOOGES HAD A COOKING SHOW THIS AMAZING TEAM OF CHRIS, BILLY, JIMMY & GUILLERMO WOULD BE IT LOL THIS WAS HILARIOUS 💚
