    Vinegar softens the shell, it is a chemical reaction between the calcium in the shell and the acidity of the vinegar. The salt helps with fluid transfer through the more porous shell.

    You stick with the Dukes "AS for me & My house we serve HELLMANS" LOL!!! Oooooo I said a dirty word! LOL!! Dukes and all that vinegar I feel like some one gave me a shot of apple cider every time I taste Dukes, LOL!!! Now come to Wilmington & get some good CRAB Deviled eggs.     @divascancook I guess that is right...adding vinegar to the water when making poached eggs keeps the whites from breaking apart in the water.

    @AtheistExile Because the shell is not that impermeable, it is the the film just inside the shell that is. Heating the egg will denature the proteins in the film so that it will not keep it's proper functionality and liquids will be able to penetrate better. It would also be the acidity that would react with the denatured proteins in the inner film and cause it to stick to the shell and separate from the albumin of the egg white which is more + charged than the now - charged film.

    Honestly, I don't know why I'm watching this when I'm allergic to eggs. It really sucks not being able to eat eggs when so many other food has eggs in them, and eating egg substitutes in food just isn't the same. :(

    I wondered the same thing . . . the egg shell is impermeable so I don't know how the vinegar and salt can possibly affect what's inside the egg shell.

    Your eggs came out lovely, but I wish you would've put a disclaimer not to cut them in your hand! The eggs can be very slippery, and you could cut yourself very badly!
