La Palomita with Bevin

This is a riff on a riff on a riff
A client recently wanted a Salty Dog, which is only 2 ingredients. They specifically liked the one at Eight Row Flint, but I didn't want to completely bop off their idea. So I made this version but with Vodka.
Being the Mezcal lover I am, I replaced the Vodka with Mezcal.
I swapped the tarragon and pink peppercorn for Cinnamon and Black Pepper.

2oz Mezcal
2oz Grapefruit Juice
1oz Aquafaba
1oz Vanilla-Cinnamon-Black Pepper Syrup (I honestly winged this, let me figure out my measurements)
1/2oz Lime Juice
Shake 10 secondsish
Rim Glass with Orange Pepper
Double Strain
Garnish with dehydrated grapefruit
