Im 27 so i grew up watching Gordon Ramseys shows as young preteen with Hells Kitchen, then Kitchen Nightmares to Hotel Hell. I have respect for him but whenever i was watching a recipe from him it just seem complicated or had a mixture of ingredients that were hard to obtain or had to shop for. Ever since learning about Marco Pierre White i have more respect for him than Gordon. The way he cooks is honestly almost magical. He doesnt intimidate the average home cook with complicated recipes or ingredients. 90% of his ingredients are what i have at hand or i can easily find if i run to the store and that i appreciate. I like how i dont have to use a specific measurement for an ingredient and its more freestyle to ones taste preference. I actually relax with these videos vs Gordons where i feel almost rushed or i never have the correct ingredient.
This is so true. I do like Ramsey but just his ridiculous over the top ‘on the heat off the heat’ scrambled eggs method illustrates exactly what you mean
After looking into the whole "Ramsey vs Marco" thing, my respect for Gordon has vanished. Now he just comes across like a big bully that likes showing off to me. :/

I am however able to state, that after a few years of cooking at home, Ive become much less worried, and fine with now having the "exactly" same result, every oven is different, so its probably impossible anyway, but I understand w why newer chefs at home feel like they didnt get the "nice" bird, and even tan on theirs as Marco did, which isnt important, as long as you have something that you can eat in the end :D and enjoyed the cooking process :D

@rumpole33 Duck/Goose has a much higher fat content than a Turkey does, so by the time the breast meat is cooked the skin is undercooked and "rubbery" instead of crisp. So you stuff a Goose/Duck, in order to slow down the cooking time of the breast meat so that it cooks at the same time as the skin. With a Turkey, the opposite is true. When the skin is ready, the breast meat is underdone. So you have to apply more "fat" to baste the breast meat while it cooks.

I've used a lot of stock pots over the years. To be honest, they don't taste fresh and are quite unhealthy. They make our lives easier and may be appealing to the people who are used to processed food, but in my opinion, they are not good
