I followed the recipe to the T but the wrapper turned out so hard, not chewy nor clear at all. The starch proportions were incorrect. Other youtube only uses tapioca flour or made from tapioca pearls. I will give it a try later.
i try exactly amount of water. but why it doesn't right? the dough getting very dry, hard, almost can't move to stir. so, i add more and more to get the right texture.

食譜中水的份量, 依照影片中說的5碗半, 應該是中式的236CC乘以5.5等於1298CC, 約1300CC. 看老師手拿那一大杯的水豪邁倒入攪拌盆的量, 估計和1300CC差不了多少.

都一樣,一般肉圓製作都是先吹過,之後再炸...如果喜歡吃阿三肉圓那種就用180度的高溫去炸酥..之後再泡到醬汁裡面....泡醬汁的肉圓不用擔心炸太硬...泡了會軟化,但吃起來依然酥脆
