쫀득하고 시원한 망고 아이스크림을 만들었어요~
망고 퓌레를 만들어 넣고 생망고 과육도 넣어 더 시원하고 맛있는 것 같아요~
전분을 넣어 쫀득한 식감도 나고 부드럽게 입안에서 녹더라구요~
저는 망고 과육을 넣었는데 과육을 생략하고 퓌레만 넣으면 더 깔끔하고 모양도 예쁘게 떠질 것 같아요~
진하면서도 개운한 느낌이라 먹으면 정말 시원하고 맛있답니다~

▶재료
망고 240g
설탕 40g
레몬즙 10g
달걀노른자 3개
설탕 30g
옥수수전분 15g
연유 180g
뜨거운 우유 250g
바닐라익스트랙 5g
생크림 350g
망고 퓌레 130g
망고 130g
▶레시피
1. 망고 과육과 설탕을 냄비에 넣고 끓이다가 망고가 다 으깨지고 졸아들면 레몬즙을 넣고 살짝 더 끓인 뒤 체에 걸러 다른 볼에 옮겨 차갑게 식힌다.
2. 달걀노른자에 설탕을 넣고 섞고 옥수수전분을 넣고 섞은 뒤 연유를 넣고 섞고 뜨거운 우유와 바닐라익스트랙을 넣고 섞는다.
3. 냄비에 옮겨 담고 약불에서 걸쭉해질 때까지 저으며 끓이고 다른 볼에 옮겨 차갑게 식힌다.
4. 생크림을 부드럽게 뿔이 서는 정도로 휘핑하고 식힌 (3)을 체에 걸러 넣는다.
5. 차갑게 식힌 망고 퓌레도 넣고 섞은 뒤 망고 과육(130g)을 넣고 섞는다.
6. 용기에 붓고 평평히 한 뒤 냉동실에서 6시간 이상 굳힌다.

10g Lemon juice
3 Egg yolks
30g Sugar
15g Corn starch
180g Condensed milk
250g Hot milk
5g Vanilla extract
350g Heavy cream
130g Mango puree
130g Mango

Hey, guys. If you're the type to be clumsy; do not hold the mango in your hand (the way Cooking Tree had held it) when you're cutting it. Place the mango on a surface when cutting it in half (or when crosshatching) so that if your mango or fruit just so happens to be much too soft, you don't accidentally slip and cut into your hand. Also, you can totally use a spoon to scoop out the dicing like Cooking Tree had done instead of using a knife.
Raene Dela Rosa yes you are absolutely right! I always use a spoon, it is easier and safe! But I also prefer to eat with hands and get all messy, it’s fun too (and tastes better)🙂
It's quite easy to cut all the way through the skin when you have it on a surface, however, so be careful to cut the mango lightly.

Mango is my favourite fruit 😌 it’s been so long since I’ve had mango ice cream it’s not super common outside of east Asia it’s sad
The best thing about these videos is that nothing goes to waste everything was scraped off real good, i hate it when when the tiniest bit goes to waste and Asians don't do that.

When you are making the creme anglaise you should whip the yolks and suger more. You should also pour one ladle of hot milk to temper the eggs and then pour the mixture to the rest of the milk. If you wont do that you might get scrambeld eggs in your mixture. Other than that great recipe!♥️

Hello cooking tree, I'm just wondering, will adding a pinch of salt make any difference to the taste of the icecream? FYI as usual i loooooove just watching you cook.
어제 그대로 해먹었는데, 부드럽고 아이스크림 느낌인데, 연유+우유+생크림이라서 그런가 망고 조각을 안 넣었더니 뭔가 우유가 엄청 많이 들어간 느낌이예요 ㅎㅎ 개인적인 느낌으로는 망고퓨레를 더 많이 넣으면 망고맛이 더 진할 것 같아요
