Leftover Turkey? Let's Make Turkey Stew Ep.120

Let's Make Turkey Stew Recipe:
- Using a 6 - 8 Qt. pot on medium to high heat
- Add 1 Tbs. of each olive oil and butter
- 2 cups diced onions
- 2 stalks of celery diced
- 2 large carrots diced
- 1 tsp. of poultry seasoning
- 1/2 tsp. of each salt and pepper
- Stir and saute for 5 minutes
- Add 2 large cloves of garlic finely diced
- Saute for 1 - 2 minutes
- Add 5 cups of chicken stock
- Optional - If you have leftover gravy add now, up to 2 cups
- Turn up to high
- Add 2 cups of potatoes - cubed 3/4'' to 1"
- Add 2 cups of sliced white or cremini mushrooms
- Add 2 bay leaves
- Bring to a boil
- Turn heat down and let simmer for 12 minutes, stir occasionally
- Stir in 5 - 7 cups of leftover turkey, let simmer for 10 minutes
- Mix 2 Tbs. of cornstarch with 1/4 cup of water mix well and stir into stew
- Turn up heat, stir and bring to a boil
- Add 1- 12oz. ( 341ml ) can of corn
- Add 1 cup of frozen peas
- Lower heat let simmer for 10 minutes and serve
