Maybe I’m missing something, if all the rounded Side of the sex bolts are on the outside wouldn’t that be more of a deterrent. Opposing sex bolts makes zero sense, also this is a glass door.
He reversed a couple of the thru-bolts as a security measure. To prevent someone from removing the bolts/screws to remove the door and gain unauthorized entry. Security should be your first concern.
Except for the bottom pivot in the threshold, the pivot hinges unscrew pretty easily. All the grinding and hammering seems unnecessary and unprofessional. The only advantage is you have the door in the frame the entire time but usually removing it is no big deal. I do these with a helper though.
U had bolts thru on the door but did u also had thru bolts on the frame ?
Where did you find those shims ? All I can find are the wooden ones.

So the hinge cannot be unscrewed and taken off the hinges
