As a Chicagoan living in San Diego, pizza is something I miss so much. There is no good pizza here. My husband and I discovered Giordano's when it was just a storefront on California Avenue near 63rd.Street before it started to expand. It was near our other favorite, Palermo's on 63rd, when it was just a tiny storefront near Western. If you haven't had it, you really need to! It is the best thin crust pizza in Chicago! I can't wait to try this recipe. I'll let you know how it turns out. Another pizza I miss is Bacino's thin crust spinach pizza. Ever had I? Unique and delicious! Would love a recipe for the crust and sauce. I'm pretty sure how to make the cheese/spinach mixture. Nice family!! Thanks so much!

@ who’s they and what does that have to do with anything ?? Yes you do use raw sausage when making any pizza. Of course an individual may choose to precook for whatever reason , but traditional Chicago pizza uses raw sausage. And yes that is stuffed pizza simply because it has an upper crust. Doesn’t matter what you put in it raw sausage, cooked , partially cooked , the upper crust makes it stuffed , not deep dish.
i had a go at a pequods and it turned out pretty good. charred but good! ive a nice malnatis recipe im trying to perfect then i'm definitely gonna try this next. i loved the vibe of the videos btw really fun. make more!

Thanks for the comment! This was actually a mix of parmesan and romano cheeses. I believe Giordanos only uses parmesan though. At the end of the day, it’s up to what you want on your pizza!
You don't have near enough oil--to be authentic you need about 15-20 Tbs. for that amount of flour it and use canola or corn oil. The short mix/knead is good. Leave out the olive oil in the sauce. Use 6-in-1 tomatoes. Use butter to grease the pan.
I make copycat Giordano's pizza at home all the time. I'm in the south so if I want it, I have to fly to Chicago or Vegas to get it. Such torture. When all else fails....make your own. I bake mine in a large iron skillet and share with my friends.
I am from Chicago and have been eating Deep Dish and Stuffed Pizza for the past 40 years. You just made a stuffed pizza. Deep dish does not have the second layer of dough. Also, you are missing the cornmeal in your recipe.

Cute vid, but the thumbnail is not only misleading, it's woefully false. Giordano's is not burnt, so if you got one and "happened" to take a pic of it and save it for the day you'd make this pizza at home and need a bad version of one of the best pizza places in Chicago, then ok. But truthfully, you start a channel with clickbait thumbnails and your subscribers are gonna take notice.

Possibly the best recipe for deep dish I found on RUclips, coming from a Chicagoan. 🔥
Pretty good. After years of experimenting lard in the dough is key. Also the only way to get those flaky layers is a dough sheeter.
I use cheesecake pans. Once it's done, just release the sides and it's good to go. Haven't noticed any issues going from my old pans.
