The Art of Making Ravioli

- Jim Vinciguerra and his daughter Teresa making ravioli the old fashion way at Vinciguerra Ravioli Co., in Jackson, California. Jim Vinciguerra never got over his grandmother Teresa's ravioli, "the best I've ever tasted." So after a 32 years with the Department of Corrections, he decided to start his own little ravioli company in his hometown of Jackson. He searched high and low for a ravioli press, finally locating one in storage that belonged to a retired Italian deli owner in Stockton. Vinceguerra made him an offer he couldn't refuse and in November 1999 launched Vinciguerra Ravioli Co., where he churns out five kinds of sauce and an equal number of ravioli - 54 to a box - attracting customers from Nevada to San Francisco and beyond. "We've done over 7 million ravioli since 1998," said Vinceguerra, who's in the middle of his busiest season - around Christmas and New Year's, with Easter down the road. Video by Manny Crisostomo mcrisostomo@sacbee.com
I'm amazed at the people who condemn and say he's not doing it right considering he's put out 7 million of them since 1998 . I imagine the people condemning has made few or none. I love this video Jim, keep on making ravioli's!!!

32 years with the Dept of Corrections... you must have taught them a trade skill in brick laying
2:34 I mean.... your hands are cranking the handle, but it's identical to that "mechanized" method other than that.
It’s not mechanized in that the dough sheets are spread out by hand and the filling is applied by hand. Factories have machines doing those things. You critics are a bunch of nitpickers.
I just happened to go there last Thursday. For years I had driven past what seemed to be an Italian restaurant that was extremely clean and organized. I found it strange that there was never any cars in the lot. Could it be a front for the mob? The mob in Jackson?!?
I stopped in and while walking around the back saw posters and photographs of the Sopranos on the walls. As usual I could see no one in the joint. Jim caught me trying to open the front door. He waved me around to the drive thru window.
You here for some ravoli? I said are you a restaurant? It took a couple seconds of explaining for me to get the idea. His menu is a single sheet of paper. Just ravoli and sauces. No web address. Just a phone number.
I was going to be on the road all day so I couldn't buy anything that might thaw in the car. I'll be going back there soon tho.
Thanks for the article Sac Bee.

That machine doesn’t make raviolis... it makes money.
BRAVO JOHNNY!!! I can not believe that Italians did not sue him for this blasphemy calling this cash grab machine dough, where by colour you ask if there is ANY egg in the dough....it is soo rubbery
i would not want to have to clean that place up after a long day
Ok, you have made enough for my lunch, what is for supper ?
I'm Italian and I'm AMAZED by this traditional method. Bravissimo Jim! Bravissima Teresa!
If you spread the filling over the entire bottom how do the edges of each ravioli seal?
The filling is principally squeezed into the cavity by the die and pressure of the rollers. What little remains helps glue the seal.
exactly....who ever made ravioli knows that this is just pure money grab....
Ellerinize emeğinize sağlık,her seferinde hayranlikla izliyorum
Good job. SIR ,FANTASTIC JOB. WISH I HAVE SOME. THANK YOU FOR YOUR TIME
The Brand or model of the raviolies machine ???
Amazing! Just got a ravioli machine and noodle maker from the hubs for Christmas. I've always done both by hand. Sister is here for the holidays...and today's the day to make ravioli for New Years....wish us luck! You make it look so easy!!!
Still commercial just old equipment
Where can I find this kind of ravioli press machine? And it has some name?
Jim, Thanks for your old school teatro. I just removed a ravioli line from Brooklyn, NY. Faster and quicker but certainly not hand made with charm and finess' . Gracie Pisano! Jersey Jim
Lol hand made because you turned the crank and turned on the machines? But adding electricity to those rollers would pervert the integrity? Get fucked.
Dough spread by hand, filling spread on dough by hand. Hand cranks the ravioli cutter. Go be stupid somewhere else.
This is a great video.

Fantastic, congratulations!
Wow.👏🏼👏🏼👏🏼✌️

0:53 Watch those fingers near the dough press or you'll be singing 'finger catch-a-tolee'.
Go get a job.
Using a plastering trowel to even out the layer, v amusing to see a construction tool used in this way. The big machinery is fantastic.
Christ to all these comments lol, this is as close as you're going to get to hand made for the quantity they turn out. Here's a hint, if you make "hand made" Ravioli, and use so much as a knife to cut them, you're not technically making them by hand either.
I have a mini version of that ravioli maker - ruclips.net/video/VKyZpEoSj-8/видео.html
And I hate it!
And one adult italian
DA ARRESTARLO...
Ewwh you can tell he is not European Maltese and Italians really don't cook Ravioli like this and it look horrible
The roller machine is called a "Dough Breaker" or Dough Break" Every Italian bakery in Brooklyn had one to make Cannoli & Sfogliatelle. Hard to find one today. A dough sheeter can also be used but they are not as strong. Great vid amazing talent. Bravo!
That was great, thanks for sharing!
what is the brand name of your vintage raviol machine ? have you looked at modern day industrial ravioli machines and if so, which models do you think are the best, I live in miami , I have been making raviol for my family and friends for more than 20 years, I have sold to a few local restaurants in the past. I have been kicking the idea around of trying to make money with it and do it. I love the way your machine works, it looks classic, I only roll out pieces of dough that 3' x 3' and I hand cut them much larger than your machine, 5 or 6 raviol would be enough for one meal for an adult. any feedback you have would be greatly appreciated, thanks, rob
Looks very good.
I'm very interested by this mechanic ravioli machine. Anyone know where can i get one on those ravioli machine? Thank you :)
Man I would love to try some of these. Nice video, thanks for this excellent presentation.
I dont know why but my brain saw Dr T in that man's face anybody else?
Good to know about making the pasta dough ahead of time I made some fresh pasta two days ago and I'll use it tomorrow night and make some spinach shrimp truffle ravioli
Bravisimo caro , thanks from Argentina!!
yes. yes i am adding this to my haikyuu playlist, dont ask questions
hi! where do you get the boxes for the ravioli? thank you!

🍽🍷🤔🐷
Perfect, congrats
I love how the process is 95% machine made ravioli, but oh an actual human turns a crank so it's "hand made" hahahahah.
exactly !And he blaims others for mechanizing the process lol
That lack of hygiene has that gentleman, does not cover his mouth, nor covers his arms, does not cover his head, does not wear gloves, etc. Spits the food when speaking, hair falling and beautiful in food, snot drops in food, etc.
Andy Torrealba curious do you eat anyone's food besides you're own? Because you're gonna get others DNA. Iirc you don't need gloves or hair net depending on certain criteria.
But he wears sunglasses.
and !! i love this ravioli
You must be european.
Is NOT handmade!!! You use maskine(!)
:)) have you ever been in a kitchen?? Even my grandma used that much machinery by making pasta.
Dough spread by hand, filling spread on dough by hand, dough placed on top of filling by hand.
Very cool! But that is still mechanized... It's not 'hand done' because you are cranking a wheel... LOL
This ravioli looks terrible. Dough too thick, and under stuffed.
Well, phuck you very much and thanks for dropping by.
LOL. That isn't hand made either. You are using machines too. Hand powered machines, that's all the difference there is.
He spread the dough by hand. Applied the filling by hand. Applied the top layer of dough by hand. Go be stupid somewhere else.
the filling looks ugly. i wouldnt want to eat that.
Looks like Teresa eats too much of ravioli!
:)
Sorry but isn’t Italian ravioli!!!
Impressionnant 👍👍
He is using a machine right in front of you and tells you in your face that "it's hand made" 😂
Love the video though...
If you use a small pasta machine to make your pasta sheets for your ravioli, isn't that hand made? I see this is kind of the same, just a little larger scale

Oh go get stuffed. His ravioli is better than most in Italy and has no ground up dogs or cats in it like some over there.
No hairnets no gloves, ewe
exactly what i was thinking. not even for the video.
