- Jim Vinciguerra and his daughter Teresa making ravioli the old fashion way at Vinciguerra Ravioli Co., in Jackson, California. Jim Vinciguerra never got over his grandmother Teresa's ravioli, "the best I've ever tasted." So after a 32 years with the Department of Corrections, he decided to start his own little ravioli company in his hometown of Jackson. He searched high and low for a ravioli press, finally locating one in storage that belonged to a retired Italian deli owner in Stockton. Vinceguerra made him an offer he couldn't refuse and in November 1999 launched Vinciguerra Ravioli Co., where he churns out five kinds of sauce and an equal number of ravioli - 54 to a box - attracting customers from Nevada to San Francisco and beyond. "We've done over 7 million ravioli since 1998," said Vinceguerra, who's in the middle of his busiest season - around Christmas and New Year's, with Easter down the road. I'm amazed at the people who condemn and say he's not doing it right considering he's put out 7 million of them since 1998 . I imagine the people condemning has made few or none. I love this video Jim, keep on making ravioli's!!!

Amazing! Just got a ravioli machine and noodle maker from the hubs for Christmas. I've always done both by hand. Sister is here for the holidays...and today's the day to make ravioli for New Years....wish us luck! You make it look so easy!!!

I just happened to go there last Thursday. For years I had driven past what seemed to be an Italian restaurant that was extremely clean and organized. I found it strange that there was never any cars in the lot. Could it be a front for the mob? The mob in Jackson?!?
I stopped in and while walking around the back saw posters and photographs of the Sopranos on the walls. As usual I could see no one in the joint. Jim caught me trying to open the front door. He waved me around to the drive thru window.
You here for some ravoli? I said are you a restaurant? It took a couple seconds of explaining for me to get the idea. His menu is a single sheet of paper. Just ravoli and sauces. No web address. Just a phone number.
I was going to be on the road all day so I couldn't buy anything that might thaw in the car. I'll be going back there soon tho.

The roller machine is called a "Dough Breaker" or Dough Break" Every Italian bakery in Brooklyn had one to make Cannoli & Sfogliatelle. Hard to find one today. A dough sheeter can also be used but they are not as strong. Great vid amazing talent. Bravo!

If you spread the filling over the entire bottom how do the edges of each ravioli seal?
The filling is principally squeezed into the cavity by the die and pressure of the rollers. What little remains helps glue the seal.

what is the brand name of your vintage raviol machine ? have you looked at modern day industrial ravioli machines and if so, which models do you think are the best, I live in miami , I have been making raviol for my family and friends for more than 20 years, I have sold to a few local restaurants in the past. I have been kicking the idea around of trying to make money with it and do it. I love the way your machine works, it looks classic, I only roll out pieces of dough that 3' x 3' and I hand cut them much larger than your machine, 5 or 6 raviol would be enough for one meal for an adult. any feedback you have would be greatly appreciated, thanks, rob

Christ to all these comments lol, this is as close as you're going to get to hand made for the quantity they turn out. Here's a hint, if you make "hand made" Ravioli, and use so much as a knife to cut them, you're not technically making them by hand either.

It’s not mechanized in that the dough sheets are spread out by hand and the filling is applied by hand. Factories have machines doing those things. You critics are a bunch of nitpickers.

Ravioli company? So I'm guessing they are making store bought ravioli in mass quantities to put on store shelves? That meat filling mixture does not look appetizing either. And were they just adding water to that meat filling mixture, or am I seeing things? Because you would only add water to a mixture like that to make it look like there is more of the mixture then there really is. You do that to so you can save money by putting in less meat and adding water to make it seem like there is more meat.
That is just wrong. This is why I never buy store bought ravioli, and I never buy them from a restaurant either, not unless I know they are made fresh in house. Because store bought ravioli can have anything in them, as long as it's editable and legal. I don't trust food that I don't know exactly what's inside.
They have to add water for a certain consistency..the color is weird because there are greens in it like chard..if you listen and watch you won't be so critical..
Might as well not fucking eat anything. This is all fresh. Maybe not exactly at the time you buy it. But in this video it's fresh.
But yeah next time why don't you open you're ears and listen. He tells you exactly what is in that meat sauce. Heaven forbid it doesn't look brown because they added. Gasp, green veggies.

The pasta dough is way too thick for it to be a good quality, traditional ravioli. It should be wafer thin, to the point you can almost see through it. Then once you fold it over (or put the top layer on, in this case where they're machining a huge batch), the pasta will be the perfect overall thickness
CarloT99 Yup. I agree. I make fresh ravioli all the time. I actually bought a pasta machine just to make fresh ravioli. But I only use it to roll out the dough to the perfect thickness. I usually roll out the dough from the machine until it's almost paper thin. That way when you form the ravioli with the top and bottom parts of the dough, it's the perfect thickness.
This ravioli looks terrible. Dough too thick, and under stuffed.
