Long John Silver's Battered Fish with Crumbs!!

  • It took me a couple tries to get this right but it's as close as it'll ever get! Based on a recipe found online, I added to it to include spices listed in the ingredient listing for LJS's batter. You can also use this on chicken or shrimp. And the audio on my camera is failing, thus the text/music.
    What you'll need:
    1 lb cod filets (I bought 'filets' but they are more like pieces)
    3/4 cup AP flour
    2 Tbsp corn starch
    1 tsp sugar
    1 tsp salt (could use 1/2 tsp but it's also seasoning the fish)
    1/4 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp onion powder
    1/8 tsp garlic powder
    1/8 tsp paprika
    3/4 cup club soda (can also use plain water if you wish)
    Mix dry ingredients together. Add club soda and mix well. Dredge cod in batter and fry in 350* oil. Done!

    thank you I used swai fish and my mouth is happily poppin I didn't have onion powder tho I used Schweppes ginger ale I'll not ever go to long john silvers again I'm in heaven yummy omg thank you 5/9/17 UPDATE: this recipe is BOMB however i flour coated the fish THEN put it in the batter SOOOOOO BOMB!!!!!!!!

    Excited to try this! I read all the reviews, and nobody commented on this. The one thing that makes LJS fish spectacular is "Malt Vinegar" (for novices, this is a TOPPING, not an ingredient). I love tartar sauce as much as the next guy. But LJS fish demands malt vinegar. They used to sell bottles of their own brand (packaged by Heinz). Now they've switched to bottles of the same "Heinz Malt Vinegar" you can buy in almost any grocery store (not in the vinegar area, but with the mustard and ketchup). This fish is a beautiful flavor just by itself. But I promise anybody who's scared, try some Malt Vinegar, and it will change your "fried fish eatin' life" forever.

      timoteo 2001 malt vinegar is typically for the chips.

      FanOF THE ALMIGHTY GOD batter should remain cold. Ice cubes in the batter help.

    Also, most people use fresh oil to fry these. Problem is that LJS uses the same oil to fry everything so you get the flavors of the fish, chicken, hush puppies, fries, shrimp, etc in everything. That is missing when you make these at home. Hope it helps.

    Yep! Just make sure your chicken is cut thin so it cooks before the batter is too brown.

    Thank you for the recipe. It tasted just like LJS. I used 1 cup of club soda vice 3/4 of a cup. Excellent tasting fish.

    I made this recipe last night and the fish was nice and crispy and stayed that way all through dinner. Some recipes I've tried in the past start out crisp but go soggy as they cool off. My husband is not crazy about fish but he snarfed this meal! I also swapped out the paprika for cayenne pepper. Very tasty!

      helpfulnatural this is the downfall of home based frying. Fish and chicken tend to get soggy faster. Try a little less flour and a little more cornstarch to your batter. Also, let air cool on a wire rack and not a paper towel after frying. Eat right away.

    Thanks a lot! I never knew why my batter would always fall off my fish, after refrigerating. Now I know that I should let my fish sit in the batter for a while before frying.

    Worked very well. I used it tonight on sliced eggplant, mushrooms, and precooked shrimp.
    I like that it's a one-bowl recipe with no multiple dipping and it doesn't require eggs. Next time I'll increase the onion, garlic, and paprika because I like more of a kick.
    If you're making this for one person, cut the recipe to 1/4 or 1/3. Otherwise, it's good enough you'll want to eat it all, whether you're that hungry or not. I made 2/3 recipe and I could have been satisfied with a third of that.
    BTW, does anyone know if you can refrigerate any leftover batter and use it a day or three later?

      Same here when I lived in California I used to eat there all the time but then I moved to New York and they barely have any so disappointing. 😩

    You're absolutely correct. The oil they use is flavored by all the other things they fry up so no real way to get that authentic taste absolutely right on. With that being said though, this is as close as I can get to it. Perhaps if I fried up some shrimp and chicken and hush puppies and clams then it would be right on. Have to choose our battles though...

      😂🤣 I was thinking of doing exactly that. Matter of fact, when I do this, I will come back here and give some feedback. Except for the clams, I don't do those.
      But the flavor will change for sure, but I'm still scratching my head on which oil to start with. ???

    I've never eaten at long John silvers but this was a great change to frying fish with corn meal. I just added pepper to my mix, thanks for another great recipe

      I'm thinking the Club Soda would make the finished batter more light, airy, with better taste than just water. I'm actually really only asking..... How did it turn out when you used the club soda compared to the water?

    add beer and then you have beer batter the English version instead of club soda, except you shouldn't pat the fish dry, dredge in flour then batter, makes a difference in the end

    Thank you very much for your quick respond, I didn't think of the lemon flavor you are right, in that case I may try the PERRIER water, it is almost impossible to find club soda in Philippines in most cases they don't even know what it is, again thank you very much, I enjoyed watching it keep up with good recipes.

      Use that same water and marinade beef meats that are known to be more "tougher", and it will make it 172% more tender. I promise.

    I love this recipe! I used the leftover batter for onion rings and they were delicious too! This is going to be a regular recipe in our house. Replace the soda for beer and it gets better 😉

    To me it does but it depends on who you ask. It has all the same ingredients that LJS lists in their batter but play with the spice amounts until it gets to where you want it.

    @FruittisMaris Just plain ole vegetable oil. Sometime I'll add in a little Crisco when my arteries feel wide open but usually just the oil.

    Works just fine for me. May not be exactly precise but when there is only 1/2" of oil in the pan, it's either the thermometer touches the bottom or it's not in the oil at all.

    Long John's doesn't use oil, they use 100% vegetable shortening. I worked there, and we used to have contests to see who could punch the deepest hole into the block of solid shortening. Our batter mix was mixed with warm water; it came prepackaged so I'm not sure what was in it.

    On the long john silvers website there is a link you click that says "ingredients 2013" where they list ingredients for every single menu item. So if you're complaining that this wasn't right then do it yourself. This was actually very good and almost exactly the same.

    Club soda is unflavored carbonated water. You can find it at any grocery store with the regular soda or in the liquor aisle.

    I do not like fish at all, but used this same batter recipe for chicken strips, with the crumbs of course. Turned out very well! This video inspired me to try this. By frying the chicken or fish yourself, you can choose the type of cooking oil used. This empowers you to avoid trans fats in your cooking, which Long John Silvers was known for in their fried food items. I have not yet looked at Crouton Crackerjacks video list, but would like to see a video for Long John Silvers hush puppies and onion rings. Please pardon me if Croutons has already posted a video on this. Great channel and videos.

    Had to use Tonic water but tasted just like LJS. Also made onion rings with the batter and panko...very crispy. Good recipe

    I tried this recipe and there wasn't that much flavor, I did like the crisp fried batter tho. It wasn't bad once I used good tartar sauce. I may try adding more salt and more of the other ingredients

    I'll try to make that. I'm gonna use Club soda because I'm not a beer person and it's very good with Fries known as Chips so it's called Battered Fish with Chips and Fish is good with crumbs. Can you do a recipe of Chicken Fajitas please?

    Very nice. Looks exactly like it. The pieces are the best part too. Damn, now I want to some long john silvers, and it's 30 mins away, and so is a trip to the store to make it at home lol. Oh well, tomorrow then :D

    This looks REALLY good. I will definitely be trying this. We seldom to never eat fish. I am very weird about it. But this, this I can do!! yummeh I loved the tropical carribbean music. Sorry your audio is dying :(
