LIBERIAN CASSAVA(YUCA) GRAVY THE LIBERIAN WAY

- This is a Liberian dish. The name is what it is….cassava with some gravy on top or on the side. First, do you know cassava? It is very common in parts of Africa and Latin America (Yuca). It’s a starchy root plant mostly used to make fufu or garri. Personally, I love cassava because it can be combined with a lot of meals and makes a variety of food.
Today we will focus on using the cassava for ‘Liberian cassava gravy'.
Did I mention cassava gravy is not only delicious, but also very rich in a lot of essential nutrients like Vitamin C? There are micro nutrients in this meal that is essential for the body and supports gut health as well as blood sugar management.
So, let’s get to cooking!
Total Prep Time: 30minutes.
Serving: 5-10 serving.
Cook Time: 60-90 minutes.
INGREDIENTS
• Variety of fish or beef of your choice, shrimp.
• 4-6 hot pepper (spicy) or you can reduce it according to your spice tolerance.
•Olive/ vegetables oil
• Cassava, potatoes, yam, plantains
•Onions( 4-6)
• Bell pepper (8-10)
SEASONING
• 1 Tbsp of salt
• 1 Tbsp black pepper.
• 1 Maggi crevette shrimp/ chicken buillon or Maggi star crayfish/ Nigerian Maggi.
• 2 Knorr cubes.
• 1 Tbsp of badia complete seasoning.
• 1 Tbsp of lawry’s all purpose chicken seasoning.
• 2 -4 pack of sazon goya
Cooking steps:
Peel: cassava (you can mix with potatoes, yam, plantains, etc ) and cut into bits.
Boil for 20-30 minutes.
Sauces/ stew.
Fry blended bell pepper and onions for 5-10minutes and add your seasoning.
Next, add in Sazon Goya to change the color of the sauce/ stew and to add flavor. Then, mix well.
Add in your already cooked mix meat/ fish to sauce/ stew and let it cook for 15-20 minutes.
Lastly, get ready to serve.
Tip: Divide your seasoning in half; half for prepping and the other half for making the soup/sauce/stews. This way you can keep track of the seasoning and avoid over seasoning.
