One rooster to 5 hens is a perfect breeding ratio tbh. That's what I use for our chickens here. Ducks I use 1 drake to 2 hens and run in groups of about 15.

I would just suggest for you that you design your chicken/bird pens so that the front/open part of the pen is facing east since the morning sunlight is very beneficial for most species of birds.
