    What surprised me, the cutter is operating even that the lid is not completely closed. and reaching in a working machine, was for me as a Chef, a big no way in the butcher shop!

      The other half of the lid was closed. This is a large machine with two lids (one for the cutter half, and one for the other half). In Germany, most butchers have a smaller machine with only one lid.
