The question is not would God be just. The answer God is just. GOD is justice. Not if or would he as if we could put him in court and judge his justice. Read Romans 9. God is justice, requardless of if or if not, he had required the blood of Isaac.
That's a deeply profound question! In one sense, yes, God would have been just because God can do as He pleases. But in another sense, no, because God in Genesis 17:19 promised that God would bless Isaac's decendents.
