Prime Rib (Standing Rib Roast) on the Pit Barrel Cooker

- Today’s video recipe is for a Prime Rib (a.k.a. Standing Rib Roast) cooked on the Pit Barrel Cooker. It’s Christmas day and Prime Rib is a family tradition at our house. This is our first Prime Rib on the Pit Barrel Cooker.
Ingredients
• 2 tablespoons olive oil
• 7 lb Standing Rib Roast
• Virginia Coastal Steak Rub to taste, more info here www.armadillopepper.com/produ... (or Kosher Salt)
• Cracked black pepper to taste
Recipe Instructions
1. Apply the olive oil to the standing rib roast as a binder for the seasoning.
2. Apply a heavy layer of the Virginia Coastal Steak Rub and then cracked black pepper.
3. Place 4 pieces of hickory wood in the pre-heated Pit Barrel Cooker.
4. Place the standing rib roast on the Pit Barrel Cooker and cook to 125 to 128 degrees F for medium rare to medium (depending on your preference). For this cook, the time was approximately 3 hours.
5. Remove the standing rib roast from the Pit Barrel Cooker and let rest for at least 15 minutes.
6. Slice and serve.

I have a boneless ribroast that i am cooking this weekend. Not sure if i will do it on the rotisserie or the drum, but watching this i am at the. Oment leaning towards the drum. Time will tell :)

That's the way I was when making the Paella. I had invested a lot of money in that dish and didn't want to mess up. It's all part of the fun and why we keep doing it.....looking forward to your video.

Hey Jeff! Looked good to Me! A little smoke...and those awesome juices dripping down and vaporizing,
then coating the meat with that added flavor.....so Good!!!! And with the direct heat...the bones are protecting that

Why do people cut away the bones and then tie them back together?
The butcher cuts them off to make it easier for your average Joe to carve. Why doesn't the butcher leave the bones off? The Prime Rib weighs more with the bones and they can get the Prime Rib rate for the bone. Also, some people want the bones. I usually continue smoking the bones just like you do beef ribs.
@@Armadillopepper Do you think it makes much difference whether you hang your rib roast with hooks or laying it on the grill instead?...I just ordered one for a friend who has never used a PBC and will probably tell her to lay it on the rack because it will easier for her first time using the PBC....Thanks!
I don't think it will make any difference and I agree that the rack is easier.
I too prefer medium rare, but looks great. A question though, why did you use the grate, why not hang it, and why leave the bones on, which seems to me to keep rubs etc away from meat? Still wouldnt mind sitting down to eat it though All the best
I actually had several cooks that day which required the grate. You could certainly remove the bones, apply the rub and hang it just like you suggested. If I was only doing the prime rib, that's probably what I'd try. Leaving the bones on (in this case) made sure the bottom didnt't get overcooked with any flare ups and some folks like to present the roast on the bones (that doesn't matter much to me).
