- How to Make the BEST Southern Tomato Gravy
Ingredients
4 slices - Bacon
2 TBS - Bacon grease
1 Cup - Vidalia Onion (finely chopped)
1 tsp - Butter
2 TBS - AP Flour
15 oz - Diced Tomatoes
1 Cup - Chicken Broth
1 TBS - Tomato Paste
1/2 tsp - Sugar
1/4 tsp - Thyme (optional)
1/4 Cup - Whole Milk or Heavy Cream
Salt & Pepper to taste
Directions
Fry bacon until crisp in a large skillet.
Remove bacon and all but 2 TBS of the bacon fat.
Add diced onion and sauté until translucent
Add butter and flour and continue to cook until the flour is absorbed
Add remaining ingredients except milk and bring to a light boil
Continue to simmer until the tomato gravy has thickened.
Once thickened add milk and crumbled bacon.
Serve over biscuits.
Enjoy!
Southern Chocolate Gravy
Ingredients
1/2 Cup - Cocoa
2 TBS - Flour
3/4 Cup - White Sugar
2 Cups - Whole Milk
1 TBS - Butter
2 tsp - Vanilla
Pinch of Salt
Directions
In a large bowl whisk all of the dry ingredients until there are no lumps.
Whisk in milk until it looks like chocolate milk.
Pour mixture into a saucepan over medium heat.
Whisk as it comes to a simmer.
Once it comes to simmer, it should thicken in 1-2 minutes.
Once it has the consistency of regular gravy, whisk in butter and vanilla.
Serve immediately over homemade buttermilk biscuits.

Old Fashioned Southern Red-Eye Gravy
Ingredients
8 oz - Country Ham (cut into serving size pieces)
1 Cup - Strong Black Coffee
1/2 Cup - Water
2 TBS - Un-Salted Butter
1/2 - 1 tsp - Sugar (to suit your taste)
Black pepper to taste
Directions
Fry ham slices in 1 TBS of butter in a skillet over medium heat until browned.
Remove ham from skillet. The skillet should be covered with brown bits (fond).
Add coffee and water to deglaze the pan while scraping the bottom of the pan with a spatula to get all the fond off.
Add sugar and black pepper to taste and bring to a boil.
Continue to boil uncovered for 5-10 minutes until it's reduced by half and slightly thickened.
Remove skillet from heat and stir in 1 TBS butter.
Serve over country ham and grits!
Enjoy!!
Homemade Biscuits from Scratch
Ingredients
5 Cups - all-purpose flour
5 tsp - baking powder
2 TBS - sugar
1 cup - salted butter (ice cold and cubed in small pieces)
1.5 Cups - Milk
3 large - eggs (2 for dough, 1 for brushing the top of the biscuits)
Directions
1. In a large mixing bowl mix butter and flour together until well incorporated.
2. Add sugar and baking powder and continue to incorporate with butter and flour.
3. Add milk and 2 eggs and mix until the dough forms a ball.
4. Flour a clean work surface and knead the dough until it forms a smooth ball.
5. With a rolling pin, roll out to 1/2" uniform thickness and cut out biscuits.
6. Place on a non stick pan and brush the tops with one beaten egg, this will give a nice golden brown finish.
7. Bake in a 400º oven for 15 minutes.
Enjoy!

PS I'm a Georgia native, Vidalia is pronounced with the "a" long as in tape, not short as in cat, and the first "i" long as in pipe, not short like rip. It took me a sec to catch the onion, but thank you for paying homage to our great onions. They are only grown in a small geographic area in South Georgia where the soil and climate are ideal.
I'm not a biscuits and gravey type of person, but that tomato gravey and biscuits looked really good. Oh that chocolate gravey did bring back some good memories

I'm English and I've never had American biscuits. I'm intrigued. We have our own version of gravy, but it's always served with meat and vegetables. When I'm well enough I'll have a go. Currently experiencing a flare up of my chronic illness, but I still like cooking videos, especially those from scratch and budget cooking videos.

Years ago I spent a weekend in Nashville with an army buddy and his grandmother made us chocolate gravy and biscuits for breakfast and it was delicious. Being a Yankee from Pennsylvania I had never heard of it before.

I LOVE Red Eye Gravy. I make a lower sodium version that I really enjoy. Probably he only Millennial making red eye gravy, And although I like most things there, DO NOT GET RED EYE GRAVY AT CRACKER BARREL!! It's from a packet and it tasted like non-flavored chapstick. Not an exaggeration lol.

My Aunt made the tomato gravy back in the 60's. I have forgotten about it. Thanks for sharing it. I will have to look in the recipe box I got when she passed away. I,m sure it will be in there.

My dad would cook chorizo down, add a few tbls of ap flour, cook it, then add water. Makes a cheap gravy to stretch that dollar out. Serve over eggs with flour tortillas with a nice homemade salsa. Bam. Back when life was simple and good.
Here we just do it with eggs an tortilla, but a flavored grease sounds good. I've got a butcher that makes his own ,might give it a try.

Tomato gravy was one of my favorites growing up! We ate it on toast and eggs. Redeye gravy is something I learned to appreciate as an adult. Great video!

My Grandmother made wonderful tomato gravy and homemade biscuits. Great memories!
I still sort of make a strange one using chicken drippings from a rice/pressure cooker. Combine the chicken drippings with ginger, green onion, corn starch, and maybe chili oil if you like a bit of spice. The downside is you get very little because it's effectively using just the juices from the whole chicken.

Glad I came across this channel! My mother makes the red eye and chocolate gravy. She also makes potted meat gravy. I am glad she taught me before I move out many, many moons ago! Will have to give the tomato gravy a go. I have heard about it for years, but my mother never made that.
With the first one, I would’ve cooked the tomato paste with the onions just before adding the flour. Gravies are wonderful and always very simple, my life changed when I learned how to make a good gravy!

When I was a kid, my mom used to make pancakes with chocolate gravy for breakfast. I really miss a lot of these Southern style foods that I ate as a kid. Most people are just too busy to spend a lot of time cooking.

Very interesting. The tomato gravy looks good. Red eye gravy and grits, something I need to try. And the chocolate gravy. Sounds like something I'd put over biscuits and strawberries. Then top with whipped cream.
"Grits and gravy" I think were a joke once, maybe a little before I was born? I have heard people say it, and I think it came up in a movie. No Time for Sargeants? Something that very poor people would like, and then think it was great, when the city person is looking down on it... I think the line in the movie was something like "Well, it ain't all grits and gravy", speaking of something that was good but had a down side too. It might have come up in Snuffy Smith cartoons?

Good to see you back. I'd like to see you make a Louisiana style rouix. We love a good rouix. Add creole seasonings for taste. Rouix isn't very thick so, I think you'll like it. I'm not a cook but I love to eat a good Louisianian meal.
