Looks delicious. I was curious about the bottoms, rack v. No rack. Was there a difference? Also do you start timing immediately or when it comes up to temperature? I have this question on all the recipes. Love Edyes cookbook!!!!
No difference. Timer starts at the start of the cook. If you keep your flame low, we see no reason to put a rack underneath silicone. Perhaps if you cook around 275F or higher, it helps with burning, but i couldnt speak to that. Our cook zone is 200-250F, leaning on that 225F. We also do not pre-heat.

Oh man - those look delicious! Especially as someone who finds chocolate chip cookies to be a little too sweet sometimes
Nice. Im sure you could muck around with these....perhaps a sugar cookie dough and a dark semi-sweet chocolate.....so many combos !
