    Stinky amaranth stems are a traditional local delicacy with a long history. They are bright in color, green like jade, fresh and tender, delicious and tasty, and can help digestion and increase appetite. They are best eaten with rice. Some people say they are smelly, while others say they are very fragrant. In short, they are super delicious with rice.

      Can you not rinse the stems after fermentation. Remove the strong salt flavour? Easier for the kids to eat then.

    太棒了,我終於學到了..
    1949年父輩與祖輩是浙江人,隨蔣來台,帶來了這道菜,50年前我小時候曾祖母做過,記憶中我曾經吃過,後來曾祖母過世後,沒人再做過這道菜,台灣沒人做沒人吃,野地裡常見到莧菜沒人採,這一次我要自己做做看..

    其實中途要加鹽水進去助長發酵,鹽巴可以減半,發酵程度是一樣的。時代在進步,很多料理也須改善,否則損傷肝腎臟,得不償失!

    We sautee the chopped leaves and soft stems of Amaranthus cruentus; we call it "Callaloo". No need to soak or ferment anything.

    Hi Lee nice to see mother and son picking vegetables Yike is becoming more handsome and cute Maa Sha Allah Lee I'm not that fund of amaranth but the leaves are very delicious if u fry with garlic, onion green or dry red chillies it's super yummy i did have the leaves not the stinky sticks Lee first time I've seen super star's not like the dinner u made bless even though they don't like it their still eating because they don't want to disappoint u so sweet very happy see ur video ❤❤❤❤❤❤❤❤😂😂😂😂😂😂😂😂😂😂😂😂😂😂😂😂

    In our village its spinach but normally we eat it leaves not it branch ( only young branch)

    so it's amaranth.... I really need to tap back on my root. I always knew it for its chinese name since it's what my mum toldd me, but never knew the english nor the local language name in where i live. Now i know how to look for it.
