Hello from Toronto! My dad has a very interesting story about bitter melon. He hated it when he was a kid and was kind of forced to eat it in university when he told a bunch of guys he was living with that he wasn’t a fan. From what I understand, the way meals worked at campus dining halls in Hong Kong (back on the 60s, anyway), you got a main course and a bowl of rice. Some kids ate the main themselves and other kids might share with the table. My dad’s table did the latter. Except one day, they all got bitter melon and beef and my dad got something else. And the guys all reached for my dad’s main, forcing him to eat the bitter melon. So now he eats it. Lol
As an Okinawan, this is so wonderful to see! The culture is so unique and in the US it’s impossible to find Okinawan foods. Sugar cane, Goya, and sweet potato is wonderful. And fish:)

It's one of the most most medicinal benefit rich vegetables here... Most of the diabetic patients are prescribed to take this bitter melon juice or as a whole vegetable in curries... We live in Florida, and our Goya plant has grown well this year and is producing large goya cucumbers, though we lost many plants to cold spring weather. I'm going to use your recipe this time. 私の妻は沖縄出身です She usually cooks it her way. I love chanpuru and usually make it with cabbage and mixed veggies. You have a great channel. We have Asian food stores but they don't carry many products from Japan, mostly from Vietnam, Korea, and China. Finding out about Kokoro is awesome.

It is so refreshing iced in the summer and perks me up...I was excited to see bitter melon in this video, because it is a very popular Asian produce item in my area, so it was something I was familiar with. It's very addictive to people who love bitter tastes, you should try bitter melon tea! 😆💚

Crushed nuts to give it a bit of crunch is such a good idea! That nut tofu looked delicious too, like a blancmange but healthier! Your recipes give me so many ideas for healthier meals, when I'm cooking it gets too easy to throw things together and drown it in sauce instead of enjoying the individual ingredient flavours and how they combine, and making bitter melon the star really shows how bitterness can compliment a dish rather than ruin it. My favourite dish is cold soba noodles, I just love how refreshing they can be on a hot day and they instantly give me energy back, but they are very expensive to buy where I live haha - I would like to enter this giveaway and experience more ingredients and their flavours, thank you for the opportunity!

I grew up on Okinawa, Goya chanpuru is very refreshing in the summer. My favorite though is soki soba (Okinawan soba is not buckwheat) or a cup of tea and a few lumps of black sugar.

Great video, didn't know that bitter melon was part of Japanese cooking too. We use bitter melon (called karela in urdu) in Pakistani cooking. My mum used to make it in a curry with minced chicken which was very delicious and could be served with rice or roti.

I would love to try the taste of Okinawa box! It's a tough one but my favourite Japanese food is abura age, so I love things like kitsune udon and inari zushi :D I still want to go to this specialty shop (and others like the yamagata specialty shop as well, since I have a friend that's from Yamagata prefecture). I know many things I cannot take back home but while in Tokyo I would like to try some of the foods. Going to Okinawa would be even better hahaha I sometimes can get goya here from a Suriname food stall at my local market. But it's soooo bitter. I usually with shiomomi leave it 10 minutes and soak for 24 hours. I tried making goya shigure-ni style but it was still so bitter. Strange the wata is said to be the most bitter part. There are recipes with it but I never dared try it. Interesting that you use mayo in the champuru. Had seen it a s a topping but never a recipe where you add it as a condiment while cooking. I should try that next time.

@ No Ma I make mochi in the microwave and it tastes great. So fast and easy using glutinous rice flour. I mention it in case you didn't know. I used to make it by cooking rice, pounding rice, etc.

We went to Okinawa to see family when I was 10. My little brother and I tried ji-mami tofu and loved it. However, we loved it even more because we would yell "Gee Mommy!" while pointing at our American mother and then laughing. I don't know if our obaasan ever really understood why we'd point at our mother, yell "peanut", and then break down in hysterics.

Hi Miwa! My favourite japanese food is tantanmen, but as an everyday food I love natto expecially if combined with genmai and cucumber. When I was living in Tokyo I ate soooo much goya, I found it somehow refreshing in its bitterness, I don`t know, it`s hard to describe, a bitterness that is somehow healthy and satisfying :) And when I was on holiday in Okinawa I hate a lot of purple potatoes, shima rakkyo and umibudo.. I really love okinawan cuisine and I really miss those taste so I would like to try the okinawan box :)
If you would like to lessen the bitter taste, before cooking, follow the instructions below. 1) Cut open the Bitter Melon, discard the seeds and slice into 1/4 inch thickness. 2) Sprinkle some salt and mixed well, cover with a kitchen towel and set aside for about 10 minutes. 3) After 10 minutes using your hands squeezed out as much juice as you would like. 4) You can now cook and enjoy Bitter Melon!

This is what I think I heard her say: firm soya paneer(tofu), bitter melon, onion, carrot, kombu stock powder, mayonnaise, Chinese hoisin sauce, toasted sesame oil, and salt. Kombu stock powder can be made by boiling kombu seaweed in water or just substitute some kind of Maggi soup cube. I used to buy my Japanese products in Chennai in Adyar. There was a Japanese restaurant with Japanese grocery store . Not sure if it is still there as it was 2009.

kazunoko! yes! the texture is actually very similar! I only enjoy Kazunoko in oshougatsu, but my dad also used to enjoy quite often with beer! haha

I can't eat many carbs, so I take a bite and my dogs get excited to know they are getting the rest of it. I live in Tucson, Arizona in the dry desert. 🌵🌵🌵 I am far away from Japan, and not Japanese, but I love Japan and try to eat Japanese food every day, especially Okinawan food. So, this box would be perfect for me and my three little chihuahuas. They would be so happy, they might just sing you guys a "roo roo" thank you song.

I would love to try the taste of Okinawa box! It's a tough one but my favourite Japanese food is abura age, so I love things like kitsune udon and inari zushi :D
I still want to go to this specialty shop (and others like the yamagata specialty shop as well, since I have a friend that's from Yamagata prefecture). I know many things I cannot take back home but while in Tokyo I would like to try some of the foods. Going to Okinawa would be even better hahaha
I sometimes can get goya here from a Suriname food stall at my local market. But it's soooo bitter. I usually with shiomomi leave it 10 minutes and soak for 24 hours. I tried making goya shigure-ni style but it was still so bitter. Strange the wata is said to be the most bitter part. There are recipes with it but I never dared try it. Interesting that you use mayo in the champuru. Had seen it a s a topping but never a recipe where you add it as a condiment while cooking. I should try that next time.

I would love to enter the giveaway! .Favorite Japanese food is mochi. I love any kind of mochi, with fruit, ice cream, red bean paste, any kind. I don't eat it a lot because it's high in carbohydrates but when I do, I'm in mochi heaven.
@ No Ma I make mochi in the microwave and it tastes great. So fast and easy using glutinous rice flour. I mention it in case you didn't know. I used to make it by cooking rice, pounding rice, etc.

We went to Okinawa to see family when I was 10. My little brother and I tried ji-mami tofu and loved it. However, we loved it even more because we would yell "Gee Mommy!" while pointing at our American mother and then laughing.
I don't know if our obaasan ever really understood why we'd point at our mother, yell "peanut", and then break down in hysterics.

I’d like to enter the giveaway. My favourite Japanese food is sushi and donburi. Sushi to eat out and donburi to make at home. I went to Okinawa in 2018, it was in December so off season. The weather was beautiful and beaches empty. Tokashiki is my paradise island 🧡
Bitter melon is very popular with the Hmong culture here. I tried the smooth bitter melon once, and it was too bitter for me. I’ll try the bumpy one next time :)

Bitter melon is a healthy dish, will try once. But in Thailand we have Chinese bitter gourd, bigger than your bitter melon.

Hi Miwa! My favourite japanese food is tantanmen, but as an everyday food I love natto expecially if combined with genmai and cucumber. When I was living in Tokyo I ate soooo much goya, I found it somehow refreshing in its bitterness, I don`t know, it`s hard to describe, a bitterness that is somehow healthy and satisfying :) And when I was on holiday in Okinawa I hate a lot of purple potatoes, shima rakkyo and umibudo.. I really love okinawan cuisine and I really miss those taste so I would like to try the okinawan box :)

If you would like to lessen the bitter taste, before cooking, follow the instructions below.
1) Cut open the Bitter Melon, discard the seeds and slice into 1/4 inch thickness.
2) Sprinkle some salt and mixed well, cover with a kitchen towel and set aside for about 10 minutes.
3) After 10 minutes using your hands squeezed out as much juice as you would like.
4) You can now cook and enjoy Bitter Melon!

This is what I think I heard her say: firm soya paneer(tofu), bitter melon, onion, carrot, kombu stock powder, mayonnaise, Chinese hoisin sauce, toasted sesame oil, and salt. Kombu stock powder can be made by boiling kombu seaweed in water or just substitute some kind of Maggi soup cube. I used to buy my Japanese products in Chennai in Adyar. There was a Japanese restaurant with Japanese grocery store . Not sure if it is still there as it was 2009.
