I love bitter melon! We usually serve it with beef and black bean in garlic sauce with gravy. It would be interesting to try this gravy with your pork belly and tofu! Also, if you blanch the cut and cleaned bitter melon in boiling water for about 1-2 minutes and drain the water, this can also reduce bitterness of the gourd.
I have not used this recipi yet .Looking forward to making it .Can I ask ,Does it taste bitter in the recipi or does it take away from the bitter taste ? I'm sure it will be delicious. Thank you for posting

Thank you! I tried with different orders. I like to make sure tofu gets nice char, so I spend time cooking that first. The pork oil (yes!) stays in to coat everything back in the pan at the end. :) I debated to try spam but it's a bit salty for my kids so I usually cook with pork belly and make it crispy and delicious. :)

Ohhh In the Philippines, we call it “Ginisang Ampalaya” hehe. We also put salt in ampalaya to reduce bitterness.

I like bitter Melon simply stir fried with julienned potatoes, onions, garlic, turmeric and bit of cumin. Served over rice.
