You're exactly right. The only place you see the guitar with the A string is in the video, where it wasn't critical if it accidentally got hit (unless somebody ever spotted that happening). The earliest live videos I've seen of this (ellen, for example) have all had the A string removed, something I'm sure they figured out after 24 takes for the video.
Actually, that light brown device in front of the mic is called a pop screen. It doesn't clean the voice up at all, it just breaks the wind for consonants that would cause the mic to "pop", such as a "p". If it's purpose was to clean his voice up, it wouldn't still sound like shit...
Sarah is the only one who sang the same quality as in the studio record! She is simply wonderful. No idea what happened to Gianni, perhaps he had a bad cold?

Sarah and Marshall both have really good singing voices. What Gianni lacks in vocals he makes up for in creativity. Besides it sounds like he's working on his voice, he sounds the best here than I've ever heard him.
That's because to hit the high notes, Gianni would need to be singing very loudly. Since this is an unplugged version, he has to tone his volume down so he doesn't overpower the soft playing of everybody else.

Look at their "Roll up" and "Someone like you" covers. I suppose it's possible that anything can be helped in post production, but they go out of their way to demonstrate doing stuff creative and and on the fly.

That's the trouble with live singing, if you're not on your best that day, you can't change that. They changed the key so that he could sing although he's obviously not well. But I DO believe they can do it, and this video proves it! THIS is live and you can see they're playing on one guitar, what more prove do you need?
