1 1/4 Cups Raw White Rice
3 TBS Butter
20 Oz Can Crushed Pineapple
1 3/4 Cup Water
1 TSP Salt
1/3 Cup Packed Brown Sugar
2 TSP Lemon Rind, Grated
1/4 TSP Nutmeg (preferably fresh grated)
Set oven to 400. Cook rice in butter until golden (watch you don't burn it). Drain 1/4 cup pineapple juice from can, discard remainder to make 2 cups liquid. Once rice is ready add water, pineapple juice and salt. Bring to boil, lower heat to simmer and cover. Cook 15-20 minutes until all liquid is absorbed. Add pineapple, lemon rind and nutmeg. Turn into 1 1/2 quart greased casserole dish.

This is very unique. My mom used to make Hawaiian ham and pineapple rice, but this looks pretty awesome too. Looks nice and fluffy indeed. We'll eat a good rice by itself! Nice touch of lemon at the end. We feel the same about super sweet things.

Jill that sounds so amazing I can just imagine all the rice soaking up those wonderful flavors of the pineapple and the juices and that wonderful fresh nutmeg 😋 yum . This kind of reminds me of an Asian dessert called sticky Rice and it has flavors like 🥭 mango

Thanks so much Jeff! I ADORE sticky rice with Mango and learned how to make it in cooking school! I did a special study on Pacific Asian cooking! I haven't made it it awhile but you just reminded me that I should! This one is really good, especially with ham and I will be making it again (in larger quantities, lol) for Christmas dinner! 💖🍸

Seems pineapple became pretty popular in the 60's recipes. I love pineapple grilled cheese with Canadian bacon.

I bet I'm not the first person to say this, but if you were to add some fried pork and a Chinese vegetable mix to this, and you've got a delicious sweet and sour pork! I guess that'd be more like A Christmas Story and less like a traditional Christmas dinner, though.

It has chunk pineapple, a little flour, a little sugar, shredded cheese (it has been awhile since I made it so I am trying to remember it) and it is topped with buttery Ritz crackers!
