    Made this tonight but without the pineapple bowl since it was the first time I’d made it & it was just for my wife & me tonight. I just used pre-chopped pineapple from the supermarket but cut it into smaller pieces. No Roma tomatoes so I used sugar bomb cherry tomatoes. Used jumbo cashews that I hand on hand for cashew chicken that I make often using your recipe. Used half a pound of frozen medium peeled deveined shrimp without tails. Did the shrimp in 2 batches. Cooking the jasmine rice in coconut mild put it over the top. Turned out fantastic!!! We both loved it. I’ll do the pineapple bowl some time just to surprise her. This one is definitely another winner.

      Made this as well and used what I had on hand - diced kumato tomatoes (seeds removed) and the white parts of my green onions. I used leftover white rice (no coconut milk) and added some leftover tofu. It was really good! Hubby asked me to make it again. 😊

      Almost anything you eat that has flavor has some amount of naturally occurring MSG in it.

    Don’t throw away the core! Cut it up and freeze. Add to smoothies. Perfectly edible with same nutrition including bromelain which fights cancer and inflammation. 🍍🍍🍍

    I absolutely love pineapple fried rice + any type of animal protein. It's so good! The only thing I usually change is instead of fish sauce I use oyster sauce, which is my favorte asian sauce. It's divine. Probably one of my top 10 favorite dishes.
    Also, in my country at least my family uses a tablespoon of oil to make the rice. It never gets sticky.

    Pineapple causes that uncomfortable sensation in your mouth because it contains bromelin, a proteolytic enzyme. It basically breaks down or digests the proteins of your mouth. But it only exists when it's raw. It's thermolabile, which means it deactivates if heated. So, of course, grilled or cooked pineapple will never give you that problem. 😉

      Hm.. that’s good to know. I knew that pineapple contained bromelain because I’ve always heard that it’s great for back pain. I didn’t know however that it only existed in raw pineapple. Maybe best in smoothies then because it irritates my mouth to eat it raw as well.

    11:07 Idea! Cut the bottom rind off of your pineapple bowl to flatten the bottom so it doesn't wobble as you scoop/ladle out your portion

    For rice grains that doesn't clump together, cook the rice one day ahead and store it in the fridge. This allows the rice to cool down and firm up. If you use freshly cooked rice to fry, the grains are still moist and soft, and it will be mushy and harder to work with. Overnight rice will give you separate grains that works great in all fried rice recipes.

    Made this recipe yesterday. Turned out really well. Went all out made the pineapple bowl too🙄😀! One mind blowing moment for me was when I realized your blogpost has recipe multiplier for multiple servings. I visited blogpost because I did not have shrimp on hand and was going to use chicken thighs and wanted to know how you deal with it so it does not taste bland in the rice as it usually is in restaurants. I love your recipes as you talk about science behind flavors in the recipe. Thank you for this wonderful work and keep more recipes coming!

    I love that you made a simple and easy recipe for pineapple fried rice. It's hard to find tamarind or tamarind paste where we live and some recipes call for it. I'm gonna try this right away! Thanks Pailin!

    I had spicy pineapple fried rice in budapest at 11.30 pm and it was the best meal I had on the whole vacation! seriously ppl if you're in budapest visit Asian kitchen. it's the restaurant with food from Thailand, china and Japan and the meals are divine!

    This is surely touristy type of the dish. Not only for tourists a lot of good restaurants in Thailand offering this dish usually serve it this way.

    As a farang living in Thailand, I always joked that this was tourist fried rice. Great to have my suspicion confirmed!! But I'm definitely going to try making this with coconut milk, that will raise my game for sure. Thanks for another great video 🤩

    Ohhhh that looks sooo good!
    Personally, I would put the shrimp on a paper towel and dab the oil off the top and I always rinse the rice a couple times until the water runs clear before making coconut rice as it makes it fluffier and it won't stick together as much.
    Oh and slice a bacon size piece off each side of the pineapple before splitting and it will sit flat and not tend to roll.
    I just spend a couple months in The Kingdom and it ruined meeee! hahaha Even took some Thai cooking classes. The food is at another level.

    I live in an area of Orlando, Florida known as “Little Saigon” after one of the restaurants in the neighborhood (Mills-50 District). There are several Asian Grocery Stores, and I’ve always wanted to know how to utilize their ingredients, but have NO clue as to how.

    I just made your Pineapple Fried Rice with Shrimp and it’s AMAZING!
    We are having a neighborhood picnic in a few weeks and I thought it would be fun to take it with topping options like Shrimp, Chicken, Spam (?), and Tofu.
    ** Question: If I put the prepared Fried Rice in a crockpot (on low) and have the protein “toppings” on the side, will it keep during the picnic?
    My next adventure will be the Phad Thai! The Thai House Restaurant is very close to my home and I’ve gotten it there many times. Although I love them, I’m hoping your recipe will spoil me 😋🍷

    Nice recipe, Pai! Except I will replace the coconut rice with ordinary rice instead because here in SE Asia we are so used to eating Nasi Lemak and making it into fried rice will be a bit overwhelming for us. Yup, eating raw pineapple will make my tongue itchy (we called it lidas here) and cooking it will kill the acid.

    Just tried this recipe for the 1st time last night and it was amazing! However I notice that I get a lot of burnt black crumbs in my food every time I cook with my cast iron wok. Any tips on this? Also, would you make a video on how to properly clean & maintain an iron wok PLEASE?

    I love fresh pineapples but I soak it in salt water first. After that the pineapple won't make my throat feel fuzzy and won't hurt my tongue.
