A tip I got from my grandmother in Germany was to keep the pastry from getting soggy, place some dry biscuits on the bottom before adding the custard and the fruit. That makes it a bit sweeter and also keeps for longer. Not that it would last long in our house.

Hey Liz, I have a tip for you. If you cut off both ends of the kiwi and then, carefully use a teaspoon to go around the kiwi, just inside the skin, you can take the whole fruit out all at once. Then slice as before. :)

I could eat pastry cream with a spoon & call it dessert. He, however enjoys the richness of the buttery almond paste with the tart crust & fruit. I believe they use the cream as you use the chocolate as a base.

I'm sorry but that butter step after making the custard is completely unnecessary? It's like she forgot to add the butter. Like just firmly press the saran wrap against the custard to prevent a skin. I don't want to have to pull out my entire immersion blender.

The crust was to hard once (don’t over knead), another time the custard didn’t set until the second day and the their time the custard didn’t set at all. The pate sucre recipe here is super difficult to roll out and I’d suggest finding a new recipe entirely.

i did your recpie, the custard came out too too too sweet, too much. the tart is a balance between sweet and sour, it should not be a pure sugar bomb. i am so upset it came out so sweet like this, i put so much effort in it.

I will say though, the flavors of everything were very good. Not sure what happened though!

Maybe you can add a lil bit of the corn starch. Mix it with a lil bit of milk and recook it

Same thing happened with my dough. I put it in the fridge for 2 and 1/2 hours and then I try to roll it out and I started to melt and break apart.
Do not use almond milk was weird looking very transparent and way too much sugar.
