  • This beautiful Apple Tart tastes as good as it looks! Made with freshly sliced apples and a homemade crust that’s flaky and buttery, this elegant apple tart is a classic dessert. It’s so simple yet so delicious and full of fall flavors, thanks to the apples and cinnamon. It may look complicated due to the shingling of the apple slices, but it’s surprisingly easy, but that’ll be our secret as you bring out this dessert to impress your guests. This apple tart is my go-to recipe whenever I need something easy but fancy-looking. The crust comes together quickly with a food processor, and the apples don’t require a ton of prep work. You can even prepare the tart crust ahead of time.

      Everyone with any sense is afraid of mandolins. They are demon possessed implements which thirst for arterial blood.
      Source: I am a chef who cooked for 25 yrs professionally and remained scared of mandolins the entire time. Because I am smart.

    I made this tart this morning to bring to a dinner with friends. I also had enough dough for a small tart and we just tasted the small one. It is easily the most delicious apple tart I've ever eaten. Amazingly flaky and buttery crust and just the right amount of apple. Thanks to your video instructions it was surprisingly easy to make. Due to time constraints I made the tart shell 2 days in advance and left it wrapped in plastic wrap, unbaked in the freezer. That turned out perfect! Thank you so much for the instructions and the recipe.

    My mother made Dutch apple cake which looks similar to this only the apples were pressed into the raw dough and baked. Served with a sweet sauce on the side, it was a favorite of my childhood. Haven't made it in years but I may need to pull out mom's recipe book. I'll give this recipe a try also.

    John - I love using Opal apples for my tarte tatin and other apple recipes. A little more expensive than Honeycrisp, but I really love the flavor and texture the Opal gives. That and they are such a beautiful color!

    Great recipe. I would like to see a custard version and hand made crust as well. I have an aversion to food processors. This is the first version of a pie crust recipe that is appealing because it is more like a cookie. And it’s all gorgeous.

    @Preppy Kitchen I just wanted you to know that I made the apple tart and it was a big hit. Everyone was suitably impressed and one lady said "you made this yourself?", I wasn't bothered by her tone! There was a dessert contest and the lady that wins every year was very upset and informed me that the entries were closed. I told her that I had already informed the hostess that I did not wish to enter the contest and was making something to be enjoyed. Thank you it was a great day!!
    Would you please have a video on this dessert, but with a custard or cream base (I think you called it Napoleon)? Lastly would you give tips on using the rolling pin? I did not have a circle 😄🤣.

    I'm an occasional baker and your use of the Breville caught my eye. I need to upgrade my food processor because my existing Cusinart can't handle 3 cups of flour when I make dough. I'm admittedly a Breville fanboy and would like to know why you chose Breville over Cuisinart (which seems to be the general favorite). Thank you, I enjoy your chance; very much - you give valuable advice while make the recipes.

      It’s actually much easier in my opinion to make the pastry by hand. You just incorporate the butter using your fingers. Smearing it through the butter and coating it with flour and repeating the process, squeezing the butter between your fingers, flattening it, tossing it through the flour until it becomes a rough sandy texture. Plenty of pea size pieces, it just takes several minutes of extra work as opposed to a few seconds in the food processor. Then you make a well at the centre, add the wet ingredients (egg and water) and stir with a fork before using your hands to form it into a dough ball and continue with the rest of the recipe - I don’t have a food processor and make tarts frequently, there’s tutorials around too!

    I got to give a big yes to the video on the different pie dough.
    Also John, I'm afraid of mandoline too. I have one though... but I'm more afraid of that lemon zester you use all the time, I really don't know how your still have fingers. You use it like it doesn't remove skins every time you're not 100% focused on it. I'm impressed every time.

    John, you have obviously seen my scarred fingers from using my mandolin! I have become an expert at stopping the bleeding. I have to talk to myself every time I use it "thumbs up, let the palm of your hand push the cap". But there is nothing better for slicing onions! This apple tart looks amazing, and it will get made soon!

      You might want to try out a chainmail glove or knife glove! My kitchen doesn't allow us to use a mandolin without one :)

    This looks a lot simpler than the recipe I was using, which involved making a caramel sauce, and it came out a bit... wet, but now that I think about it, of course the sugar will caramelise in the oven! Probably will try this with brown sugar because frankly I think making cinnamon sugar without brown sugar is a crime, but I think it'll turn out better than the one I tried before, thanks for this.

    I’d LOVE a video on various “crusts” if you want to cover more than 2. Here’s my deal. I live in Colorado. Mile high! Dryer than some places but not as bad as Arizona. Pie crusts and the like have always been incredibly frustrating because before your videos I’ve never heard that it’s okay to add more fluid. I always felt like I just failed. Following a recipe exactly and having a crust absolutely fall apart from dryness is frustrating. I just scream and throw it in the trash a call all recipe creators total liars, which isn’t good. 😅 I’d like to hear some guidance on the texture to be looking for rather than how much fluid to add because the liquid measure will always be too dry for here. And, in baking, the boiling point of water is lower so things have to bake for longer. We usually need a tad more flour a slightly hotter oven and, occasionally, other adaptations. It’s just not generally considered in recipes so I understand why my mother didn’t bake and very few friends do. It’s difficult here.

    I just made this for the first time. The crust in the middle was quite pale, but fully baked. Te side crust was a perfect crunchy brown. Should I blind bake the crust on a lower oven rack, and/or remove the pie weights partway through the blind bake? Thank you!!

    Have you tried putting the mixture into a clean cotton tea towel and bringing it all together by gathering up the tea towel until it forms a ball. Stops the warmth of your hands softening the mixture too much. I then open the tea towel and use it flat to start the flattening process before rolling. I keep a small tea towel just for this purpose.
