    Ingredients:
    2 cups cooked Persian rice (preferably day-old for best results)
    vegetable oil
    3 eggs, lightly beaten
    1 cup shrimp, peeled and deveined
    1 medium carrot, diced
    1 cup green peas (fresh or frozen)
    red chilies, chopped (adjust to taste)
    2 tablespoons dark soy sauce
    2 tablespoons light soy sauce
    2 spring onions, chopped
    Salt and pepper to taste
    Instructions:
    Prepare the Ingredients: Ensure all the ingredients are prepped and ready before you start cooking. This includes cooking the rice if it’s not already done, dicing the carrots, chopping the chilies, and peeling and deveining the shrimp.
    Blanch the carrots and peas
    Cook the Shrimp: take a wok, add 2 tablespoons of olive oil. Add the shrimp and cook until they turn pink and are fully cooked, about 2-3 minutes. Remove the shrimp from the wok and set aside.
    Cook the Eggs: Heat the neutral oil in a large wok or skillet over medium-high heat. Add the beaten eggs and cook until scrambled.
    Combine Rice and Sauces: Add the cooked rice to the wok, breaking up any clumps with a spatula(if you use leftover rice). Add the diced carrots and peas , cook for another 1minute until they begin to soften.
    Time to add chili and shrimps .
    Pour in the dark soy sauce and light soy sauce. Stir-fry everything together for about 3-4 minutes, ensuring the rice is evenly coated with the sauces.
    Add the spring onions ,Stir everything together until well combined and heated through.
    Season with salt and pepper to taste.
    Garnish and Serve: Garnish with spring onions if desired.
    Serve hot.
