I also lived in Honduras, I was there for a year, taking a very long needed year off from the rat race here in the US. I traveled to most of the country and especially loved the Bay Islands, and proceeded to travel into Nicaragua and Costa Rica back in 2013.
I loved it, met a lot of people and to this day we remain friends. The Baleadas...YYYEESSS!! Omg, simple and awesome food...my favorite was the pupusas and the fried yuca con chicharron!!! The sopa de caracol is delicious as well and its not snail soup, its mostly mussels and other shelled fish....Very good stuff...they also have the best ceviche Ive ever had
