Thanks Jon for the great insightful article on your blog and this guided video.
I have couple of questions pls:
1 - Is there an enrollment method recommended for Windows kiosk devices?
If Autopilot, what type please?
2 - What/when is the best time to assign the Kiosk policy within the Autopilot deployment or preferred to be assigned after the enrollment process?

It's a bit tricky, because ideally you would use Self Deploying AP for Kiosk devices, but that requires you buy LTSC Windows 11 Enterprise licenses, but I'm doing a rollout with user driven AP so they can enroll with accounts that have Win11 Enterprise licenses already. So, yeah ideally if you are okay with paying for licenses then go for it and do self deploying, but either will work.
I assign it from the start. No reason not to.
