- I've never had such delicious potato cake! Easy and Cheap Mashed Potatoes Recipe
Ingredients:
3 Potatoes (420g)
¼cup Parmesan cheese
1 Green onion
Salt and black pepper
2tbsp Unsalted butter
2 eggs
½cup All purpose flour
1/3cup Bread crumbs
Vegetable oil
Recipe:
3 potatoes
Dice the potatoes
Add the potatoes in a pot
600ml water
A pinch of salt
Cook for 15 minutes on medium-high heat
After 15 minutes
Drain the water after 15 minutes
Add 1tbsp unsalted butter
Salt and black pepper
Mash the potatoes
1 green onion
Add the chopped green onion to the bowl
¼cup parmesan cheese
Mix well
Refrigerate for at least half an hour
1/3cup All purpose flour
2 eggs
½cup bread crumbs
Shape the potato into small flattened balls
Repeat
Coat with flour, egg, and then breadcrumbs
Repeat
Medium heat
Vegetable oil
Fry for 3 minutes
Flip over and fry for another 2 minutes
Done!

Been making a slightly larger version of these for years.
I tend to omit the cheese sometimes. They’re very good as an accompaniment to a meat / chicken dish.
They are derived from a Polish/ Russian recipe: Latkes!!!!!
When you make latkes the potato should be grated so you get the texture when they're fried. These are more like croquettes.

Potatoes are very good in different ways and dishes, but this recipe is the top of all, simple to make and they look delicious, love the recipe and I like that you did not load them with too many things, simple this way they taste better. My husband loves potatoes not matter in which way I cook them, but Iam pretty sure when I cook these potatoes, they will be his favorite. Thanks for the recipe. Loved.

Air frying or deep frying is a better choice so the potato doesn't soak up much oil by boiling in it

No. Leave the egg out and all that oil and grease. Easy just mashed potatoe and coat with flour and press Cook in a lightly greased griddle pan. And do them Ala benebict style with wilted spinach poached eggs and even ham or smoked salmon
