- Watch as co-owner and chef Leah Chase and chef Cleo Robinson describe and demonstrate the frying method that has helped make Dooky Chase’s, at 2301 Orleans Ave., a New Orleans dining tradition.
I’ve noticed from my grandma, who was taught by my great grandma, & all the other older people I’ve watched cook, that the ingredients & seasonings were always simple & you actually tasted the meat or whatever the base was but the simple ingredients just made it better. Now a days, we use 20 different seasonings for fried chicken & it overpowers the chicken itself. I’m so glad my grandma taught me how to cook by the ways my great grandma taught her ☺️
Amen!! A lil salt and pepper for me
RIP to the QUEEN OF CREOLE CUISINE

Fresh ingredients. Fresh flavors. Let it set, and mellow. And let her fry. I gain weight watching these wonderful videos.. LOL
I tried the recipe with the same simple ingredients and it came out delicious.
Did you season the flour
GREAT people great food GOD BLESS..
I want some now!!! Thank you for the lesson!
Season and marinate your chicken people. That is the way we do it in the Caribbean.
I make a mean fried chicken and she cooks similar to the way I cook mine. With this method you cannot lose.
What time should I be over for dinner? Lol
Girl don’t nobody care how YOU cook no chicken
If it floats it's ready!
RIP to the Queen of Recipes!
I can't get over the name. I always knew of dooky as the same as doo-ddo, poop, etc. I don't think I could ever put a dooky anything in my mouth, no matter how good some claim it is.
I was looking through the comments wondering when someone was going to say something about that name
Good fried chicken is like the Holy Grail...always in pursuit...always perfecting.
Sounds absolutely delicious, I'm going to give it a try.
Michael T Did you happen to get the type of oil she said she uses?
I know they grew up having fun these new Orleans family members be close I remember dating a new Orleans guy his family definitely made sure I was never alone they always fed me very delicious food.

A shame no-one ever told her that the protein that causes the P-nut allergy is NOT present n Peanut oil.
Was the eggs mixed and poured over the seasoned chicken?

Charlie Brown too late...welp!
You have to, for allegation purpose..
I doubt she did 😅
WHAT kinda oil? I kept replaying.
Vegetable oil. That can mean any of several plant-based oil, but soybean oil is most common.
what is that yellowish powder next to flouer
It's probably the seasoning mixture she mentioned earlier.
That's the fry station most likely not just the chicken station. Probabky breading for fish.
Corn meal for fish frying.
Yeah cornmeal for the fish
Cook talks like John Wayne..da ha da ha.. good looking chicken though..
yes she is right ! overcooked chicken is awful and harms teeth !
Facts! I use all kinds of good seasonings and still doesn’t match up to my grandma using only salt and pepper 🤦🏿♂️
I can understand exactly what you're saying. My mother used salt and pepper only as well and it was the best!!
Doesn’t mean it’s the beat
Beat fried chicken my ass
